My partner are I are avid home cooks. We do a fair amount of chopping, dicing, slicing and mincing. When he mentioned something about needing a new santoku knife, I started searching. A few months earlier, we'd been looking for a new set of steak knives and the Ikon series stood out to us for the quality of the construction and the feel of the slightly curved handle. I checked out their santoku version and decided to go for it. It is well worth the price. The blade is wicked sharp. The size is right in that sweet spot for being big enough to slice through a large onion or small melon in one swoop, but not so big that you are constantly worrying about taking off a stray finger. If you're used to a more traditional handle, like me, it may be hard to switch your grip to the slightly curved handle. But, overall, this is a very well constructed knife with great performance. Being a Japanese knife fan, purchasing a German Wusthof Classic Ikon chef芒鈧劉s knife was going to be a risk for me. No fear..... what a great knife. Fits well into my hand, well balanced, very very sharp, cuts with ease and feels quality. My only reservation about this knife is it芒鈧劉s weight. Compared to my Kasumi, this Wusthof is heavy. It took a little time to get use to the weight. Japanese knives are light and well balanced. Beware...this knife (like all quality knives) needs special looking after. No dishwasher for cleaning, no chopping bones or frozen food, it芒鈧劉s hand washing and drying. A real bonus with this knife is that Wusthof offers free lifetime sharpening. Recommend

This is one high quality kitchen knife! I couldn’t wait to try out this knife and it made my day when it arrived! This knife makes slicing and dicing the toughest vegetables and crusty bread a breeze! I love rutabaga yet trying to cut into a raw one can be treacherous and exhausting. This knife went through them with such ease I first thought they had gone soft and would need to throw them out. Not so! It also cut through a loaf of crusty French bread without crumbling, cracking or squishing the loaf. The trick is to stick the tip in and then slice downward in one smooth motion. It’s like a warm knife going through butter! I will be purchasing more knives from the Wusthof Classic Ikon line right away! Highly recommended!!
My new favourite knife! It is super sharp and a joy to use. I thought my other knives were sharp until I started using my new Wusthof Santoku. The price was pretty great too, as I have seen the same knife advertised for a lot more elsewhere. And it only took a few days to arrive!
This knife is a great addition to my set. It's perfect for the smaller cutting/chopping I need to do. The slightly heavier handle makes my cutting/chopping much easier and I like the feel of the "curved" handle. It's my new and much used all around knife. I highly recommend this knife. I also recommend buying at Sur La Table I went in and the knife was not in stock. Instead of just telling me I could order it online, the staff ordered it for me and I had it within one week.
Most incredible kitchen utensil ever!I waited too long to make this purchase!The service at Sur la Table was incredible as i was taught how to use a santuko knife. This knife glides through food and minces or thin-sluces like the ease through butter. Even my children enjoy food-prep with their Wüsthof knife sets!
First impressions are great! What a knife. Razor sharp right out the box. Feels great in the hand and cut beautifully. I guess time will tell for how long it stays this sharp. Fully intent on buy a range of these knives.
Although I own many Wustof Classic series knives this Santoku is my first in the Ikon series and the feel in hand is amazing. Incredibly sharp like all my other Wustofs, the feel and balance of this knife make precise slicing a breeze. I can easily slice super thin potatoes for dauphinoise quickly and consistently. More Ikons may be in order.
