Wasn't great i couldn't even cut an avocado, although the avo was pretty unripe the knife required a large amount of brute force to cut anything.
This is the best work horse chef knife I'veever owned. It gets the job done just like any other chefs knife, but it effortless with this knife while working with quality and class.
Every Time I pick it up to use it, I have to roll it around and look at it. Maybe that will wear off in time, but I don't know... It's hard to believe I would ever be holding such an incredible knife.
Looks great and has good balance. Feels comfortable in my hand and had little difficulty adjust the posture from my Wusthof Classic to this Performer. Not as sharp as I thought it would be, but that is easily fixed. Chops good and the weight helps to get through larger foods like butternut squash and melons. Would recommend this knife to anyone wanting a different take on a classic chef?s knife. I have never been let down by Wusthof products.
Love these Performer knives. The are sharp and easy to use, hold and clean. Only down side of this particular knife is that is was a tad smaller than expected.

I couldn't believe how sharp it was the very first time I've used it. The edge seems to retain sharpness well, and I've only used a ceramic honing rod on it so far. Love the handle texture, but I have not used it long enough to predict its resistance to gunk building up. Wish the logo is on both sides of the knife though.
