I own the All-clad copper core 10 inch fry pan and 4qt sauce pan. I found them easy to use and very responsive to heat. My steak I cooked first with fry pan was cooked perfectly and succulent. The pans did not warp or show any indication of being of poor quality when I used the pans on the stove top or in the oven. I also own a 10 piece set of Mauviel M250B cookware and I must admit that the All clad copper core pans so far cooks just as good. Thank you All-clad for making such a durable professional set of cookware. I seasoned my fry pan by using vegetable oil and heated up the pan until it started smoking. I then let the pan cool completely. I wiped the oil in the pan with a paper towel. I bought the 12" pan (on sale) as a Christmas present for myself with the goal of making my very first beaf bourguignon and was not disappointed! Yes, it took most of the day but I never had any recipe that went as smoothly as this! Cleanup was a breeze since I learned that Bar Keepers Friend is the best thing since sliced bread for this cookware! I've used the pan a dozen times with the only issue being we aren't eating everything I'm cooking, but are giving things away~

There's just no comparison between the copper core skillet and any other(and I've probably had them all over the years.) Right now, I've got an All-Clad D3 12" that's a wonderful workhorse but seriously-- cooking with the copper core is effortless and everything just comes out perfect. It's a joy to use and I reach for it time and time again. Heats up quickly, retains the heat, browns, sears, cleans up easily. But those are just words and the difference is hard to explain. For the first time, I understand why people go to culinary school :) I've got a couple of other All-Clad copper core pieces but the big difference in materials and performance really shines in the skillet.

I am using a 12” on a professional grade stand alone induction cook top. I normally cook on a Wolf Gas range. The pan is vastly superior in terms of its conductivity: The pan heats up to temp very quickly and it heat is absolutely!! uniform w/ no hot or cold spots.. The non-stick surface is beyond a doubt the best I have ever experienced ( I have 50+ years as a pretty focused home cook and some experience as a professional cook many decades ago. The gold standard test is to fry two eggs (room temp please) using a tiny splash of EVO w/ a grind of black pepper to infuse the oil. Med Temp. In a word a fried egg is just a thing of beauty and taste. It takes some experimenting to get a perfect color on a filet or veggies(most an induction top issue.) I have had this pan a few days and I’m very pleased with the performance. It heats up fast and even, while preheating we tested the temperature on different areas of the pan all were within a degree. I’m use to cooking mostly on cast iron or non stick but I really wanted to upgrade to a high end professional cookware. I’ve read several reviews about how hard this pan is to clean, I have seared heavily seasoned shrimp and skin on chicken thighs. After cooking i just poured a little wine into the hot pan and made a fond sauce. The pan basically wiped clean after that! I wish it would have came with a lid like the D3 considering the price difference however I also ordered the 5qt copper core saute pan and the lid fits this pan well.
I am heartbroken! I have worked people in the industry and they loved All-clad. I finally get enough money to purchase my own few pans, so I bought these. After a year, the non-stick started sticking. I thought it was a joke. I looked at FAQs and how to care for them. I cleaned them smartly, never used metal on them and never put them the dishwasher.Food sticks! They are dingy looking. I sent pictures to All-clad and they say that the non-stick is ruined due to over heating. What? It is supposed to be commercial grade and durability tested and approved up to 500 degrees! How does this happen? I have had Kirkland pans last longer. I paid a ton of money for pans that are terrible. They lost a customer with me.

It is an incredible cookware set and I appreciate how evenly it cooks, thanks to the copper layer. The weight is substantial and the handles are long, so they are not hot to hold. The large pot is a perfect size for soups and cooking pasta. The entire set is beautiful and cleans up very well. I do not put it in the dishwasher, even though it states that it is safe to do so. I want to keep it in great condition. I did use Bar Keepers Friend on the small skillet after making scrambled eggs and the skillet cleaned great without scratching. I thought I was upgrading here going with the All-Clad non-stick but have been seriously disappointed that the pan is essentially unusable after just 1 year of use. We used this pan maybe 2-3 times a week. We cared for it as the instructions said to. We never exposed it to high heat, never put it in the dishwasher, never scrubbed it clean with anything but warm water and a soft sponger with mild soap, never used metal utensils on it, always let it cool completely before washing. Didn't matter, the coating started to peel off and the non-stick surface is very soft.What's worse is that All-Clad won't stand behind their product. We have many other All Clad utensils and cooking appliances. We always clean them by hand and never use spray oils. The problem is with the Copper Core non-stick. We have 2 Copper core non stick fry pans and the non stick began to deteriorate. After following the All Clad directions to clean them, I decided to send them back as there is a lifetime warranty. To our dismay, they were returned to us stating that they would not be covered.
