One of our favourite pancake mix - my child calls it the mochi pancake as it does give that chewy texture which is pleasant for us. Healthy, filling and easy to cook. Bob's Red Mill is a trusted brand. We like their 7 grain pancake mix too.Our #1 favourite right now is the Arrowhead Buttermilk pancake mix. The mix smelled and tasted good even though the bad was on clearance and so old it had dust on it. The recipe makes 3 wide and fluffy pancakes, so if you're looking for the promised 8 cakes, they will be small, although they actually have some height. Bob's has fluffy mastered - never in my life have I seen such dense yet fluffy pancakes. And they are more bisquit-y than cake-y, or spongy which is good. You don't want to stir too much, just enough. Don't beat air into pancake batter. I used 2 egg yolks instead of an egg but nonetheless they did not come out "eggy" at all, but just very savory. I had to used extra liquid. I didn't get the promised air bubbles prior to turning them over, only a few near the rims, but instead I modulated the heat very carefully, even ... Fortunately, the mix was not sugary, since I wanted to use a couple pancakes more like bread. However, the pancakes also went fine with maple syrup, too. As with almost all gluten-free baked items, you want to microwave each pancake 60-90 seconds to make sure the middle cooks, which I did for two. The one I forgot to microwave was still good, just more sticky/bisquit-y in the middle. This was a lot of fun. I give them a 4 which is very, very good considering it was not really 8 quantity and probably could have used a little more whole/stone ground something or other, even just a few oats for more complex carbs.

I am putting our third case order for your pancake and waffle mix. My wife and I enjoy the full cooking experience from measuring through cooking to eating. We customarily make triple batch to make the most of the cooking process while leaving left overs for another day or two or even three. Yesterday to finish our last bag of our last case we made a quadruple order as anything less would have left a small quantity of powder to sit until we are moved to begin the process again. We customarily make sides of bacon and/or sausage to round off the meal. We swing back and forth between water or milk to finish off the mixing portion of the process. We’ve tried several brands of pancake mix and always come back to Bob Mills. My sister adds extra milk and egg to the batter for a lighter crepe style pancake. It’s gluten free so no there’s bloating or interference in absorbing our morning vitamins. We make a double batch and It stores well in the fridge without getting dried out. Crepes and pure maple syrup make for a nutritious and delicious breakfast.

I have been using Bob's Red Mill recipes with Bob's GF flours to make pancakes from scratch for some time now. They are always delicious. I saw this mix in the store and thought, why not save myself some effort and buy the mix? I was incredibly disappointed. Though I saw some negative reviews on here, I noticed that many were people who didn't follow the instructions at all. I thought if I followed the instructions, they would be just as good as the from scratch recipe. Not even close. The pancakes never got a good golden color, despite cooking them in butter and with my pan on quite high. I love these for my children. Pancakes are my daughter's favorite. I often will make huge batches of pancakes and waffles and pop them in the freezer. They re-heat with out the gumminess of gluten-FULL dough. I've made hot cocoa pancakes, Christmas tree waffles, peanut butter waffles, pumpkin spice pancakes and waffles, I've even put the breakfast sausage links on a popsicle stick and dipped it in the batter to make breakfast "corndogs". I put a scoop of collagen for a little protein as well and they hold up perfectly. I absolutely love them. Especially when planning ahead. It makes weekdays so much easier. I eat this for breakfast every. single. day. Seriously! Mixed with non-dairy milk and toped with sunbutter and jam. I have IBS and chronic migraines, and this product feels so comfy in my body.
