The frying pan is great, however, the handle is not very comfortable, it's very thin and kind of sharp. Since the pan is heavy, the handle edge presses into a palm every time you lift it, I even got a bruise from lifting and moving the pan while I was seasoning it. I also got a Mineral B Pro frying pan and it has a different handle, and I don't have such a problem with this pan. Thus, I would rather pay more and have a comfortable handle and this is something I'll be paying attention when looking for a new frying pan in the future.

I was considering this purchase for a year or more, watched many videos and finally made this purchase while it was on sale. It's true that carbon steel is an entirely different type of cooking, the pan heats quickly and evenly, is perfect for caramelizing food and making a meal in a pan. This pan is 3mm thick so that's all that's between the food and heat source making the cooking surface very responsive. I have SS lined copper and D3 pans, this is a different experience from those two and is now my go to pan of choice. If you are serious about cooking you have to add this to your collection. The pan is heavy and the handle will heat up, it quickly developed a non stick surface.

I've reviewed another 11" de Buyer Carbone Plus on this website and I can say the same for this pan. The reason I take the time to write this review is for the service more than the pan. I had ordered an 11" and a 9 1/2". I figured the free shipping over $49.00 would make it worthwhile, and I'd have the smaller pan for smaller jobs. So I put the order in late one night. I saw that the 9 1/2 was out of stock, and not expected to be available again for almost a month. So I did a bit of looking around on the site, found that the 10 1/4" pan gave me a bit more cooking surface, was in stock, and only $6.00 more. I called Kerekes in the morning and asked if I could pay the difference and substitute the 10 1/4" for the out of stock 9 1/2". Excellent price and swift delivery from Sous Chef of 2 x De Buyer Carbon + frying pans (20 and 28cm). Both took initial seasoning (on gas ring) easily and well and despite limited use so far the 28cm pan has proved effective in sealing and frying of meat with only light oiling and little adhesion if kept moving. As expected, seasoning suffered with acidic additions (e.g. creme fraiche) but cleaned up easily before re-seasoning. If using at high-temp or for long periods, I'd suggest the insulated handle glove is a necessity for 'pan handling'.
