Im using this for bread - mostly a no-knead (well ok semi knead!) and used straight it tastes amazing and is a family favourite. Great for any other bread as well of course. Hope to try it for sourdough soon! Brilliant mixed with other flours eg rye and wholewheat too.
Fantastic quality and texture, smells like fresh flour (try smelling your supermarket flours - no smell).As I opened the bag, I immediately noticed the quality of this flour. I do bake all kinds of bread a lot, and seen how they bleach the flours, I decided to go for the organic unbleached. I don't think I will go back. Yes, it costs a little more, but would your and your family's health worth it? To me it would.Professionally delivered, well packed. Thank You!
I used this organic white flour to make "ancient" or ciabatta-type bread (using just yeast, flour, salt and cold water, with slow fermentation) and it came up well with good resilient crumb and crust. However, the flour (13% protein) performed not noticeably better than Lighthouse brand bread flour (12% protein) from the supermarket. With delivery, the 5kg flour cost $35.95 or over $7 per kg, which simply isn't worth it for any benefit on $3 per kg brands from supermarket.
I’ve used this flour for years for all manner of baking but mostly bread each day for my family. Something has changed, I’m not sure whether it’s the mill or what but I’d argue for approximately the last 6 months or more the dough is heavy and clumpy/lumpy after being kneaded. Not that lovely soft smooth dough I used to get. Nothing else has changed in my recipe or the way I make bread. I’m wondering if the mill has changed and therefore the protein content which would make the dough clumpier. I don’t enjoy using this anymore and will have to look for another option

This is my go to flour for making sourdough. The high protein content and strength of the flour is great for long fermentation periods as well as a beautiful open crumb. I've tried many different flours for sourdough and default back to this one every time. Excellent flavour profile particularly when paired with Honest to goodness whole wheat organic flour. A match made in heaven!
This flour has achieved reasonably good results for sourdough bread making. It's expensive but worth it for being organic and sufficiently strong to support 60% hydration for sourdough.
