Global SAI Santoku Knife 19cm
As a Japanese knife manufacturer, Yoshikin is committed to the Japanese art of cutlery making. Therefore, the Global Sai knife series necessarily includes kitchen knives in the original Japanese Santoku form. The Santoku knife offered under the name Global Sai Santoku 19 cm Sai-03 with its 19 cm blade length is the longer of the two available Santoku knives of the Global Sai Series. With the Sai-M03 kochmesser24.de also offers the smaller Santoku knife with a blade length of 13.5 cm. So you can choose which blade length you prefer for your Santoku. The term Santoku means "knife of the three virtues". So you can use it to cut meat, fish and vegetables. The blade height of 5.0 cm is slightly larger than the Global Sai Chef's Knives 19 cm Sai-01 and Sai-02 of the Global Sai Kitchen Knife Series. The Santoku consists of 3 layers in total. The two outer layers are a slightly softer stainless steel alloy called Sus 410, which protects the hard Chromova 18 Sanso core with a hardness of 59 degrees Rockwell and makes it resistant to external influences. The handle of the knife is ergonomically shaped and is characterized by the special grip position for the thumb. The thumb rests gently at the transition between the handle and the blade and therefore ensures a loose and relaxed grip. As with the classic Global knives, the handle of the Sai Series is filled with fine sand to perfectly balance the knife and ensure balanced working. The seven dots on the handle stand for the seven virtues of the Samurai and are intended to honour their centuries-old tradition of knifemaking. Another design feature that ensures liveliness and modernity is the hammerblow look, which is applied to the knife by hand. This not only lends a beautiful appearance, but also has a practical use, which is comparable to a hollow grinding on other cooking knives. Due to the exceptional sharpness and perfect handling, the knife is perfect for both professional kitchens and private use.

Global knives are just the best and this Santoku knife is the latest in my collection. It is light to hold and cuts any meat or vegetables beautifully without the food sticking to the knife .I have other knives and they usually end up in the back of the drawer. Try Global. You won't be sorry

I'm writing this review from a funny standpoint. Though I gave the knife 5 stars I returned it because it is designed for those with a right hand. It is usable as a lefty but I didn't enjoy the idea of using something that wasn't designed for me. Outside of that, the knife is fantastic. Fit and finish is evident and the right handed thumb grove is very comfortable. It's 5 stars because I believe the majority will be happy with this purchase. I can't comment on the sharpness or comfort from use but running my finger by the blade I could tell it was sharper than my 8 year old german chef knife.

It's the biggest knife I've ever own and I absolutely love it. I love the look of it. How it's stainless steel all over. no wooden bits, or corners for food to get stuck in. Easy to wash too.

The balance and shape of the Sai knives is wonderful and the blade quality is top notch. This santoku is a nice size for quick, every day prep work and turns out perfect chiffonades, dices, and slicing every time. I haven't needed to sharpen yet as I am not a super heavy user. It's worth noting that I also have a heavier german style chef's knife for heavier work like cutting through a large melon or hard squash.
Knife feels great in my hand, has a great weight, and is great size and shape for use as a heavier petty knife. My only real complaint is the edge. It’s not near as sharp as I would have expected from a global, and had I not bought it on sale I would have returned it. I wouldn’t say it was dull, but it definitely wasn’t sharp. For the price, I don’t mind having to sharpen a brand new knife, but I shouldn’t have to.
Years ago, my husband bought me a set of Global knives and I hated them. Not because of the quality of the knife itself, but because the handle of those knives was not comfortable to hold and work with. Fast forward to this knife. What a difference! Fits my hand like a glove and of course, Global makes a really nice knife. This is my new go to knife for everything.
Heavier than other Global knives and the least sharp out of the box kiten knife I've bought, had to go strait on the stones. I wouldn't buy another of these, I'd rather one of the other Global ranges, or for this type of blade construction an I.O. Shen.
Love the knife! I use it for everything. Great for chopping vegtables. It is the sharpest knife I have ever seen.
This knife is in constant rotation in our home kitchen. Perfect size and feel. Very happy with our purchase!
There's lots to like about this knife. We have two Global classics, and one Global Ni in addition to this Global Sai, and I prefer the shape of the Sai's handle. It fits very nicely in the hand, and is very good for a pinch grip, too. The only disappointment is that the description claims that the hammered finish adds some non-stick properties, but it is not as effective as a hollow ground edge. Other than that, I would give it five stars.
