I received the 14 inch hybrid pan with lid as a gift (at my request) and, quite frankly, have been disappointed overall. The pan is very large, which I anticipated due to the posted dimensions--however, the lid is much too bulky and large which makes clean up and storage of the 2 pieces problematic. I already have a similar style Calphalon pan, but it's only 12". Perfect for the family for a stovetop to oven to table on pot dish, but not big enough for a group of hungry eaters. My 14" skillet won't fit in my oven because of the handle. This pan is perfect for larger groups with matching appetites. My first meal with this pan was a simple country French chicken thighs cooked in rice pilaf with mushrooms and fresh seasonal vegetables. The pan was preheated over medium heat until what oil began to smoke. The chicken seared to a beautiful golden brown. Although a nonstick, a nice fond was left after removing the chicken. After draining excess fat, the onions and rice released most of the fond and the rest dissolved with the addition of chicken stock. However, they are of the more traditional looking nonstick variety that will likely eventually lose their nonstick properties much like the cheaper pans I've used commercially. Make no mistake, I will be replacing my current inventory with a corresponding Hexclad product in the future and they will likely be the last pans I ever buy.

After being initially impressed with my GreenPan pans and then subsequently quite disappointed, I was, at best, cautiously optimistic when I purchased this HexClad pan. After a few uses, though, I can confidently say that am beyond impressed! As HexClad advises, it is (seemingly) important to season this pan first. I actually seasoned it like I would a cast iron pan, with an oil rub and an hour upside-down in the oven at 350, but I am honestly not sure it made much of a difference beyond HexClad's recommended method. Ultimately, I highly recommend the HexClad line, and as soon as I finish writing this review, I will be purchasing the President's Day set that includes almost all of the remaining HexClad pots and pans. (We were going to put it on our wedding registry, but, you know... it's on sale now, so... why wait? Haha.) Anyway, 10/10 recommend. Happy cooking!

I have this zucchini casserole that I've made for years, using an old All Clad sauté pan that has warped and the non-stick is delaminating. I looked all over for a pan that would compare, but found nothing until I saw Gordon's ad. It took me a while to convince myself to spend almost $200 on a single pan, but I after it's first 3 uses, I am looking for reasons to use it. I have an induction range that has been finicky about which pan it will connect to, but, the HexClad connected right away. The heat transfer is near perfect. I cannot find a single hot spot - unlike the AllClad which had several. Sautéed veggies and straight into the oven at 400 is considerably faster than before. The only thing I'm not crazy about is the obnoxiously large, domed, lid! I provided a 5-star positive review on one of the three HexClad Hybrid Pans that I have purchased over the past few months, but not sure which product I left it for, so I feel compelled to review these pans again. I now have the 10", a 12", and a 14" pan with lid. Fast forward 9 months…ugh…the coating started to chip. Shocking. Worse, the pans started to retain the taste of dish soap! Yuck. All the rinsing in the world didn’t remove the taste and this would transfer to the food. Gross. The hunt was on again. Additionally, I am in the middle of a kitchen reno and am taking the leap into induction cooking 😬😬😬, so, not only non-stick but induction compatible. I found a pan made in Scandinavia (so it must be good-right?!) and ordered two pans. They worked GREAT, no need for plastic utensils, cooked food well-still had to keep the temps in the medium heat range but for the most part solid pans. BUT-in a couple of months I had the same dish soap flavor issue. 😢Fear not! Enter HexClad! I’ve had this pan for a few weeks now and it couldn’t be better. It is the perfect combination of cast iron, stainless and non-stick you could ever ask for, I use it for everything! The fist night I cooked frozen chicken nuggets and broccolini! Perfection! I know, I know chicken nuggets, what can I say. I love this pan. I’ve used it for veggie tofu stir fry, fried eggs, bolognese, salmon, pork chops, pancakes, BACON! I rarely use another pan now except to boil noodles - This pan cooks BEAUTIFULLY, caramelizes onions, meats, makes eggs, over easy with crispy edges! Can be used above medium temps, goes in the oven, cleans itself. Okay, you still have to use water and a touch of soap and maybe a sponge but I promise you, the flavor of dish liquid will NOT transfer to your next meal. BUY. THIS. PAN. NOW. You will not be disappointed. I am saving my pennies so I can purchase a full set AND the new bbq grill pan.
I purchased 2 pans - the 14inch and 7quart fryer. LOVE these pans. The 14 inch is great because of its depth, food does not stick, and it cooks perfectly evenly. I wrote a review for the other pan and mentioned that I initially hesitated to purchase the pan bc of the cost, but it is worth every penny. I wish I had purchased it sooner as I have spent less money for more pans. It would have been better to purchase (1) quality pan. Using the pan a lot, and no regrets. Highly recommend this product!
I almost returned this pan thinking it was too big and also shallow and questioned what would I ever use it for. Well, I decided to go ahead and use it and SO glad I did! It is my new favorite pan. It holds so much. I can cook all my chicken in one batch at same time - and it browns up nice with only a little oil. You can cook/saute a bunch of vegetables - all at one time! Lid is big/tall/deep but also really nice addition and it has a vent. The pan handles don't get hot. Cleans up really easy. Directions say you can use metal tools in it - still apprehensive to do so - gentle if I do - but awesome! Love this pan and wish I could gift one to all my friends and family! It and the lid are large but I love em!
As an experienced cook who worked for a high end gourmet kitchen retailer for years, I own and use all the top brands with all the features. Not satisfied and still looking for a truly non-stick pan that could take some heat, I came across these at a Costco trunk show. As I watched the demo I could tell immediately these were something different, very different. I pulled the trigger and bought the 7 piece set and hit the floor running! Not satisfied and still looking for a truly non-stick pan that could take some heat, I came across these at a Costco trunk show. As I watched the demo I could tell immediately these were something different, very different. I pulled the trigger and bought the 7 piece set and hit the floor running! Immediately impressed, I purchased the 14" everyday pan and haven't looked back. These are my everyday, go to, do-it-all pans! The high heat I can achieve and the non-stick is incomparable! Anyone who says they have problems with these pans are not paying attention to a few minor tricks to successful use.1.Follow the manufacturers directions to initially season the pans then.2. Season the pan with a bit of non stick spray each use.3. Reduce your normal heat level until you get used to how these pans work, they can get wonderfully hot, fast, and I love it!As far as care, they're super easy to wash, I wash by hand and it's quick. If something gets a bit crusty and needs a little extras soak, soak it, it will come right off. I like to occasionally do quick spritz of non-stick spray to the pan and wipe it in real quick prior to putting it away if I've had to clean it extra good, I feel it re-seasons the pan for the next use.I don't have much else to say other than these pans truly are a wonderful no brainer purchase! Do it, don't hesitate...you won't regret it. Have fun cooking, it shouldn't be a chore with crappy pans, get these, don't look back!
This is a beautiful pan. I would really like to see a Smaller version of this. It takes up so much space on my stove, it is hard to put other pans on the stove with it. Would also like a not so tall lid on a smaller version too. I made small omelets in it first. It really does need oil to keep them from sticking. I did not put enough and they all stuck to the pan. Fortunately, they still turned out good. The pan is super easy to clean. My goal is to have a set of these pans and get rid of my other pans. My hope is, these will be the last pans I will ever have to buy. I have tried so many pans through the decades and have not been happy with any of them. Please come out with more pans with the buffet handles. They are easier to store in cabinets and do not take up so ... MoreThis is a beautiful pan.
