I was looking for a way to make grits cakes. I have had them at a favorite restaurant, and decided I wanted to try making them myself. Almost all the recipes I came across would have me pour the hor grits into a cake pan, put the the pan in the refrigerator to cool, cut it into wedges, and fry the wedges. I put cake release in each of the wedges, poured the grits into the wedges, and put the pan in the refrigerator to cool. Once cooled, I preheated the oven to 450, put the pan in, and cooked for 18 minutes. No frying! And the grits cakes popped right out! However, to get the cakes a little browner, I will extend my baking time to 20-21 minutes so the cakes can brown a little more. Great Pan for corn bread or even brownies. The Pan makes every piece of bread have a delicious crust while the inside is still moist. Nothing sticks to this pan as long as you remember to put baking spray with flour prior to adding batter. Another tip is to remember to preheat your cast iron pan when you are preheating your oven. Cast iron just makes everything you cook or bake come out wonderful if you take the proper steps. Wonderful Pan !
This pan is a high level WINNER but only if you care for it and use it correctly. NEVER use sprays on it. Look up: homemade pan release recipes. Hand wash and dry promptly. All cast iron needs proper care before and after use. I never use cooking sprays for anything. By the way, it is NOT dishwasher safe.
Comes Pre-seasoned which is a plus. Perfect for a small dinner where everyone gets a slice of cornbread
