It is easy to make it sharp with a sharpening stone, but without the weight of the willow blade, it can't reach the ideal sharpness, and because the blade is smooth, sometimes it will stick to the food, but there is no doubt that this is a very comprehensive knife, except 剁Meat, it can adapt to any aspect

Excellent knife, portioned some steaks and fish with ease. Love the handle and is a pleasure to use.

I owned a 240mm ux10 Sujihiki, it was 10 years old, I decided to buy a longer one this time, idk what kind of steel does ux10 using right now but I’m pretty sure it’s different than the one I had 10 years ago, this new steel doesn’t hold the edge very long and can’t take an extremely sharp edges, you can tell the difference while sharpening.

I debated whether I should get a Nenohi slicer or Misono UX10. I've heard some people say that the UX10 is really not that great and that a lot of cooks use them because of the brand name. But I have to say that this knife really does have a superior edge and it's pretty nice to sharpen too. I guess overall I'm a big fan of Western style knives made in Japan.
These are advertised as top of the Misono line and they are not kidding. This is a razor right out of the box, and a couple regular touch ups with a Shapton 6000 make this knife an indispensable piece to have in your arsenal. Stainless steel is great to use during a busy service (easy to wipe clean, no smells, slice a lemon on the fly care-free) and the handle feels snug and sturdy.
Outstanding knife! Well balanced in blade and handle. Delivery was promt and accurate.
The knife is sharp out of the box, and has an good fit and finish that is expected with the Misono brand. The knife did need an initial sharpening with a few weeks of use. I’m a chef and I can highly recommend any Misono knife; especially the ux-10 series.
My 100$ wushtof is sharper than these most expensive knifes, I also bought a petty and a sliver and they aren’t worth it for the price! Look for another brand as this one ain’t it! Don’t recommend
This is my second misono knife, I would not buy this brand again, the knife quality had gone down, steel is not good as before.
I am a professional chef and have the whole set of Misono UX10 knives. They are the very best and sharpest knives I have ever used.
