Once I was done, I seasoned it for a good six hours, and the following day while watching the tutorial videos that Oklahoma Joe provided, I felt empowered to be able to successfully smoke a brisket for the first time. Overall, this product is beautifully designed, pays homage to traditional smokers and produces great smoked product.

Was looking to get back into charcoal and wood cooking as I have two pellet grill and gas. Thought about barrel smoking but was impressed with loading fuel or cooking surface. Saw this met everything I needed and wanted it arrived assembly was good went smooth. Seasoned it and cooked a couple butts first and then five racks of ribs. The smoke taste was amazing and everything I was after. Relearning the charcoal and wood has been easy with this design adjustments for temperature was simple with a little patience I could not be happier with purchase.

This is a great design for a smoker, you get a Barrel type center box that you can add fuel without messing with the top, with a grill style top, that you can smoke and grill on. It's pretty versatile and big, they even have a griddle and Pan replacement for the grill plates that turns this into a super flexible unit. The replacement Grill box was damaged with dings and gouges and the lid looked like someone rode it down an asphalt hill gouges and scratches through the metal and powder coat. Called them again, sent pictures, they sent yet again, and same results we went through this 5 times before getting a box that wasn't damaged. At one point sending me a lid for charbroiler enameled unit. After getting a box that wasn't damaged, the lid was still badly damaged and did not fit the curve of the grill box. I called again, was told the lids were hand fitted, however the lid didn't fit the box it was sent with. The lid still had very bad powder coat damage and corners were mangled. They do not secure their parts in the packages and all of this can be more than likely attributed to shipping damage, when shipping the lids they lids are so heavy and the packing securement is slightly more than a letter in an envelope you can't expect your product to make it without damage. The last time I called I was told a lid would be sent. That was a week ago. I'm tired of dealing with this. I took a lid that fit that has some bad nicks and gouges and am just done with OK Joes. After having to dispose of at this point 5 Grill boxes, and 7 lids....I spent more money in gas/time/and disposal costs of the damaged/incorrect parts shipped to me that it would have been cheaper to have bought it from a big box store where the unit is shipped by the pallet so chances of less damage. Good luck to you if you ever have to order replacement parts and actually spend the money for parts to be shipped to you if you think they won't arrived damaged.

I have been shopping around for a new barrel smoker and when I saw this product, I got very excited. Finally something like a barrel smoker that you can add fuel into. I drove across town to the only store in town that had one in stock, and then spent all night putting it together. The next day when I loaded it full of charcoal to begin the seasoning process, I noticed many flaws. As the smoker began to heat up and run, even more flaws became evident. First of all, smoke leaks out of several different places on the grill that it’s not supposed to, including the back corners of the grill, the smoke stack gaps, the firebox itself, the side air supply, and worst of all the lid. My barbecue came with the lid, already crooked and not sitting correctly flush on the grill, but even when I force it into the right position and hold it there with my hand smoke still pours out of gaps on the lid. This grill boasts about even heat flow, however, my temperature gauges were about 75° apart at almost all times. Either the heat flow is way off or the temperature gauges were broken from the factory. There are so many air leaks and smoke leaks in this thing that it is impossible to choke off your charcoal. It’s just going to burn itself all the way down every time, because even if you shut every smokestack off and every air source off, there are still plenty of leaks for it to burn. There were also many parts that had the paint grinded off. I am thoroughly disappointed. They just don’t make things in this country like they used to. With just a little bit of pride and workmanship this could’ve been a revolutionary smoker design and instead it’s just a flimsy piece of garbage that I’m going to have to return to the store. Sad

I think that if you’re a first timer that ones to try smoking and grilling this one is a perfect choice. It is easy to assemble, make sure not to lose the nuts and bolts as it comes at an exact count. It is heavy so get help to lift it. Like any other smoker you will have hot spots that will have a higher temperature than what you are aiming for so you will need to use it and learn. Get another set of ambient temp gauges as the ones this one comes with are too high to get a good temp reading on the bottom grill. Overall a good smoker, needs slight cost effective improvements. 1st: apply shipping tape to edges of box, package arrived with a whole vertical edge of the box ripped out. 2nd: apply shipping tape to the back of the bolts hardware packaging, on arrival this was ripped and half of the "A" bolts were scattered throughout the box. Maybe this could be supplied with purchase? I am very stisfied with this smoker, I like the versatility and the amount of cooking space with the adjustable height grates. Lastly, with the popularity of your products, I wish you guys would make a 1/4" thick steel offset in raw steel (like a miniature franklin) with 4 lockable casters and a tall grate level bolt on stack. Cost effective of course.

When smoking, I felt it was much easier to control the heat using the dampers than with a traditional offset that I have used in the past. Clean up was also much easier. I've done ribs and a butt so far with excellent results. After 6 hours, the ribs were fall-off-the-bone tender with a great smoke flavor. After 11 hours, the butt was tender, easy to shred with a awesome smoke ring. Grilling steaks over charcoal was everything I hoped for. Racks. What good is it to have two additional racks if you can’t access the food on them without getting burned. If you hang your utensils from the rings which are situated right in front of the heat chamber, you better were some cotton gloves, because they will be on fire!4. Fuel. I use a blow torch to start my fuel. However, using this method makes it dangerous to put the fuel basket in when the basket is over 500 degrees and smoke blowing in your face. And this basket is not easy going in and heavy when loaded up. This leads me to have to use a fire starter or cube to light the fuel inside the grill for safety. I won’t even begin to talk about how dangerous it is to reload during a cook.5. Leaks. One of the main reason’s why I’m using more fuel than I use in my Bronco is for the leaks. The door is so offset that it cannot seal correctly. I know that they sell gasket and clamps, but that an additional cost to this already expensive grill. I can run my bronco with less fuel for 15+ hours at 250 with no problem. Not so much with the Marshall. I get make 5+ with more fuel.6. Heat deflector. It does a very poor job of distrusting the heat evenly. Though it has two smoke stacks the left side of the grill is always 20-30 degrees hotter than the right. Which causes me to to have to stand in front of this thing, getting heated up by the chamber because I’m switching the meat around.OKJ, I really wanted to love this grill but it doesn’t compare to the other grills/smokers you’ve produced and that I own. I spent months debating over the Judge and this one and now I am wishing that I would have went with the Judge but that too has issues with the welding on the hinge. Never the less, the Marshall does afford me more space to cook large quantities of meat.
I have wanted a smoker foe years and I am so happy I got the Oklahoma Joe's Marshall Centerbox Smoker! This smoker is a game changer!! It is super high quality with sturdy pieces. The wheels are nice big rubber wheels not small cheap plastic ones. My husband pretty much assembled this himself in about 2 hours with me helping occasionally with holding something and lifting into upright position after the legs and wheels were assembled. It came with easy to follow instructions and was easy to assemble. We seasoned it and then we were ready to smoke! I was SO excited. We did a Boston Butt first and it turned out amazingly well especially for our very first cook! The dual temperature gages definitely helped to watch the meat without having to open the lid. It has 2 smoke stacks and also other air vents to make it easy to adjust the heat and smoke. Very little (if any at all) smoke comes out of where the lid comes down. The removable basket at the bottom makes for a super easy clean up. Like I said we did a Boston Butt first and since then we have done chicken, salmon and even vegetables. It is absolutely amazing! I meal prep with the meat we cook. This smoker can also be used as a regular charcoal grill so you know we had to make hamburgers and hotdogs. Ladies and gentlemen I can not say enough good things about this smoker. I can not wait to smoke a whole turkey for Thanksgiving!!My favorite so far was prime rib. We invited friends over and everyone was raving about the food and so envious of our cooker. They could not stop talking about it. I could go on and on but all you need to really know is I would recommend this to anyone!! My husband and I have never owned a smoker and it has not disappointed.

We have used this smoker a few times already grilling steaks and burgers as well as smoking a brisket. It does an excellent job grilling and smoking meats. There is plenty of grill space and I really love how evenly heat and smoke are distributed. With the removable ashtray, clean up is a breeze too!
