I buy my knives exclusively at Knifewear. As a Chef, I want the sharpest, most beautiful tools and Knifewear is where to find them.My 7 1/2 year old grandson and Sous-Chef in training is very respectful of knives as I’ve taught him to be... that’s why this 6” Shun was a perfect gift for him. Francis at KW Vancouver showed me several but I fell in love with this one. Light, sharp and small enough for his little hands!The attached video shows his reaction!

Knife:Came in immaculate condition. Beautiful, and SHARP. Love the slight asymmetric handle. It's not intrusive, just feels right. Lightweight for an 8" full tang knife. Love the blade shape for how I use it. Belly is good for rocking cuts, but not too excessive for slicing. Point is nice, and useful. Two months with multiple users (my wife is not too picky about knife care by the way, but we have at least kept it out of the dishwasher.). Still what most would call SHARP, no traces of rust, handle fit is still perfect. I sharpened it this morning just for this review and it went fine. (I am a right handed woodworker. I am picky about what "sharp" means, and I frequently sharpen knives, chisels, plane blades.)Purchase:Sur la table web site showed it was in stock ... MoreKnife:Came in immaculate condition. Hello! I have slowly managed to collect about 10 pieces of the shun cutlery and I absolutely am thrilled with each piece… the 6 inch chef knife is wonderful for so many things I need especially chopping smaller fruit and whatnot … I used to use it in my work when I worked for a company making fruit arrangements,I actually had that in my contract that they provided me with four shun knives of my choosing. I chose the six-inch chefs, the eight in chefs, the paring knife, and the bird beak. Again they are wonderful knives! I love the way the handle fit so comfortably hour after hour and they look beautiful to and of course they are beyond sharp! Don't forget that you need to hone and sharpen them just like you would other quality knives to help keep them razor sharp! ... MoreHello! One piece of advice though, even though I think they say they are dishwasher proof dishwasher safe I would not recommended at all for the handle. I believe that my knives are so nice that I wash them after every single use and towel dry them and then hang them up in my knife rack which is a strong magnetic bamboo board (The magnets are hidden inside the bamboo to protect the knife blade) hanging on the wall to protect them. I am not a professional chef or anything and along with my blend tech these are the big splurge that is in my kitchen that I would not want to do without :-) One of the few drawbacks though is that I don't allow my husband to use them because he doesn't treat them like I believe they should be treated… He has own set of knives that he can trash all he wants! Lastly, we are down to just one child who is a teenager so I am comfortable with these knives hanging within reach… I might not be as comfortable if I had young children still in the home (I would probably keep them, along with any other knives) locked in a drawer or wat out of reach) but of course that's up to your discretion. I guess the only other thing I can tell you is that since I live in HAWAII near the ocean ((lucky me!) the humidity is very high and occasionally I have to scrap a tiny bit of rust off the flat end of my handles… But anyone who lives super close to the ocean knows that you cannot avoid rust that no matter how hard you try. They are beautiful knives and I highly recommend them! Aloha!

I have this Shun knife (the 6; chef's), the larger 8; chef's knife, and the classic utility. This is my favourite all-purpose knife (out of a large collection of knives which include Wusthof, Icel, Kasumi, Kyocera ceramic, Victorinox etc). I prefer this smaller chef's knife to the standard 8 as I have fairly small hands, and find wielding the standard knife a bit too confronting. I am by no means a professional; just a very enthusiastic cook. The Shun knives seem to keep their edge better than a lot of my other knives, and they all receive the same treatment. I prefer Japanese knives over the German ones because the blade is narrower at the top, and so slicing is easier (this is just personal though). I thought I had good knives that functioned well in all my cooking. But I found myself constantly sharpening them, which didn’t last very long. I saw knives on the Sur La Table website that seemed better and had great reviews. So I bought this one! It is a joy to slice and chop, it’s so sharp that it feels like I’m slicing through butter. I take good care because it will cut. Y fingers easily being so sharp! I love it and hope it will always so so sharp . Try it for yourself

I received a Shun Santoku knife a few years ago, and have loved it. I finally bought this Chef knife, and cannot believe how sharp it is, how balanced and controllable it is. So happy to have this.

Every kitchen needs a chef's knife, a paring knife, a bread knife, and probably a santoku. But once you've covered those basics I 100% believe that this knife is the best addition.The 6" chef's knife is especially nice for those with smaller hands, or when you're cooking a smaller portion (i.e. for one or two, vs. a whole family). The thin Shun is incredibly sharp, and the shorter length makes it agile and easy to use.Hey Lefties!! One thing to keep in mind regarding Shun classic knife is that the handle is contoured to fit a right hand and Shun makes a specific knife for left handed cooks. For the best comfort, that's the one that you will want.
