Honestly, you can’t go wrong with this bad boy. Yes, I know, it’s pricey. But it may be the single greatest pan I’ve ever used. It’s lightweight, but sturdy. Heats evenly, and it cleans like a dream (always important). But best of all, being stainless steel means you’re going to get amazing crusts on your meat, beautiful fond to make delicious pan sauces. Goes from stovetop to oven without issue. Truly versatile. If you are on the fence, let me tell you to take the plunge!

I moved up to AllClad from another brand of tri-ply cookware simply because it was on my bucket list. My old set was fine but the change was like moving from a Ford to a Lincoln. they both do the job but the difference is in the quality was immediately apparent upon unboxing the 8" and 10" fry pans. I've since acquired 9" and 11" French skillets, with the same impression (why are those no longer made?).The biggest difference was how evenly the All-Clad heats up and how well it stays that way. I'm not a master chef by any measure but that predictability is helpful and gives me more confidence in what I'm doing (I can ruin things better LOL!).If I had a quibble it would be the instructions calling for medium-low preheating. You have to learn your stove top as well as your All-Clad to have them make good for you! Lesser pans may be more forgiving, but All-Clad should be used properly to do its best.

I have been cooking on cookware that was handed down to me and is almost 50 years old, Naturally I get hot spots in these pans. This pan heats so evenly cooking with it is a game changer and makes cooking easier. I got a nonstick piece for Christmas and like it so much I bought this one and just ordered a 10 inch to go along with.

The first set of stainless steel pans I owned had a disk bottom. I was frustrated when trying to follow recipes because the temperature was difficult to control and not very even. I have a small All-Clad pan that I used briefly to cook some eggs a few months ago and found that they didn’t stick. The heating was really even and they came out great. So I went and got the 10-inch pan and have been so pleased. I am able to follow the recipes and they turn out just the way they should. The heating is even and uniform and the pan is even lighter than my other ones. I am so glad that I decided to upgrade! The pan is well-balanced, easy to use, easy to wash, and performs great! I will be using this daily for years to come!
My first All Clad purchase and I'm sorry to say that I'm not impressed. The handle is thin, oddly shaped and uncomfortable to hold. It is not designed to adequately support the size and weight of the skillet. I believe that based on all of the positive reviews that the quality of the steel must be good and I like that it's made in the USA, but I personally cannot cook with it. And why is it so hard to find lids for the various sizes of pans and skillets? Doesn't a world reknown cookware company realize that most cooking requires lids. Their website had very little to offer. I'll pass on All Clad.

I bought this pan about a month ago and have been experimenting with it on a variety of foods. I've done a couple of braises, chicken breasts and thighs (boneless and bone-in), and veggies including shiitake mushrooms, which tend to stick easily. I've read other reviews about the pan sticking. Yes. It will stick. Any stainless steel will. However, if you deglaze the pan with 1/2 cup or more of liquid (I've used water, chicken broth, heavy cream, and vinegar) almost everything that's stuck (the fond) will come off. I'm also religious about cleaning the pan and make sure to soak it in hot water before I start cleaning. I go through a lot of Barkeepers Friend, but my pan still looks as good as it did on Day 1.

But for me I find 3 additional All-Clad items have proven to be useful additions over the years, they are: #1 The Roaster with Rack (turkey, roasts, casseroles, lasagna), I use this regularly. #2 The Pasta Pentola though I now use it infrequently because I've found the 3-qt covered casserole (included in this set!) is just the right size for soup, sauce, and pasta when cooking for 2-4 ppl. The Oval Bakers (set of 2) are essentials; I use them constantly for individual entree portions, sides, and baked desserts. The 10" version of the pan performs as well as my 12" version. Heats up quickly and is mostly non-stick. Love the even temperature and the lightness of the pan. Much better than the graphite pan I recently bought from All Clad, which underperforms in all categories except weight.
