Experienced baker. Bought Custom Breadmaker on 12/31/23 when old 20+ year old machine died. Wanted a rectangular loaf and beep to remove paddle. A feature particularly necessary as I found the flat wide paddle hole is worse than a tall thin hole. I made multiple Basic Medium Crust setting loaves, including one using a recipe from Customer Service. All resulted in a very light crust underbaked loaf. I can get a Medium crust using the Dark crust setting and leaving the loaf on keep warm for a few minutes. Fruit drops as expected on Sweet setting, but loaf is underbaked. I don’t know whether this is all a problem with Bake temperature on my machine or a design flaw.

I can't wait to make my next loaf of custom bread made using whole food ingredients, as it should be, in my Breville Bread Maker... Having a kitchen full of Breville appliances, I keep wondering what took me so long to buy their Custom Loaf Bread Maker...

I have twice fixed the two recurrent problems with this machine that seem to be mentioned everywhere on the internet. This is over the last two years of very infrequent use of this machine by my wife. I think it is OK to own if you either consider it to be disposable and can afford to buy one every warranty period, or if you have the skills and time to fix it yearly. It makes a nice loaf of bread when it is working. Problem #1: collapsible paddle ceases to collapse. Solution: after each use use a metric allen wrench to take it apart and clean/oil it vs buy replacements frequently. Problem # 2: "Select" knob stops working (a lot of questions without solutions on the internet about this). There is no main circuit board replacement available so you have to be comfortable sourcing, removing, and resoldering three components to fix this. I waited a couple months before I left a review, because I wanted to leave a honest assessment of the "Custom Loaf" bread maker. My first try at bread making had mixed results. 1st, I didn't temp the water with a thermometer (used my finger to temp water). 2nd, I scooped the flour with the measuring cup. Both no no's if you read their recipe. I made a 2 pound loaf, and the bread came out done, but denser than normal bread. Would have been perfect for slopping up gravies or soup. 2nd try and every loaf after turned out great. As far as those who have had problems with the paddles staying up, after the bread basket cooled, I filled it up with hot water & a little dish soap about 1/4 way up, leaving the paddle in it. After about five minutes, I took the paddle out, rinsed it off, and used a tooth pick to get the dough from the crevices. Paddle works fine when you get the dough out from the crevices. Takes like 30 seconds. If you follow the directions, it's almost impossible to screw up. It's great having fresh bread when I want it, and it stores well. I put mine in a freezer bag, removed the air, sealed it & my bread would last for around 4 or 5 days. I found that a 1 pound or 2 pound load is same size, comes down to how light or dense you like your bread. Can't wait to make pizza dough. The breaker maker seems a little big, but when you see the size of the loaf...Not so big after all. I couldn't be happier.

Expected more for the price

I received this as a gift a year and a half ago when my low-end bread machine gave out (that one lasted about 5 years). I use it nearly daily to mix our bread dough (using the pizza setting) and it does a great job with that. I love how the lid is removable, making it relatively easy to clean the machine. I also like the pasta dough setting and use it a few times a month.Now for the shortcomings. First, with the default settings, the machine always overproofs the dough. Always. And the bread has a tendency to stick. It's annoying, but I hardly ever actually bake the bread in the machine, so it isn't a big deal. The collapsible paddle stopped collapsing within a week of use and nothing could get it going again. This pan failure happened even though I've never submerged the pan and it's never been in the dishwasher.I guess I would expect that for a premium cost and brand, the parts would last much longer than they have and the machine would generally perform better. All things considered, I don't think I'd recommend it for someone who would use it as much as I do.

I really like this bread maker and it is turning out great loaves. I have used Cuisinart machines for many years and this compares nicely. They don't make the one I like anymore so, even though it is still working, I figured I would try a Breville for the day the other one breaks down. I am now using the Breville as my main bread maker.I think my only complaint so far, is that the bucket doesn't snap in to make it more secure, like the Cuisinart. Therefore, it rattles very hard and loud while kneading. I don't dare leave it unattended for long as I'm afraid it will bounce right off the counter. Works amazing, however the only downfall is that it’s VERY hard to clean every tiny little space within the paddle and the rivets in the bottom of the pan, it’s virtually impossible without something tiny to poke out the stuck bread. Wish it came with a separate recipe book rather than in the instruction manual itself. The recipes are also a little unclear, if you didn’t read the whole book you wouldn’t know that all liquids have to be a certain temperature, ingredients layered a certain way, how to use the paddle, what you can substitute certain things for, some recipes even just say ā€˜oil’ without saying what kind of oil and they don’t say whether to let it cool in the pan or take it out right away, that’s MUCH earlier in the book before the recipes. This is the best bread machine sold today and I’ve reviewed all of them. I’ve read many of the reviews and here are some tips:1) You need to put the machine on a silicone mat, or some other kind of rubbery mat to keep it from walking around during kneading.2) If you notice that your paddle is touching the pan then your paddle is broken. If you notice that you have circular scratch marks on your pan then your paddle is broken. You should replace it. The paddle should never touch the non stick surface of the pan during normal operation.3) Science has learned that the ideal temperate for yeast to thrive is in the upper 70s Fahrenheit. Use the ā€œmodifyā€ button to change the default rising temperature to 80 — the lowest it will go unfortunately. If you notice that you have circular scratch marks on your pan then your paddle is broken. You should replace it. The paddle should never touch the non stick surface of the pan during normal operation.3) Science has learned that the ideal temperate for yeast to thrive is in the upper 70s Fahrenheit. Use the ā€œmodifyā€ button to change the default rising temperature to 80 — the lowest it will go unfortunately. The default is 90. This will help your dough from over fermenting. Very Disappointed with Breville This Time!

The unit arrived with cosmetic damage (heavy dents) on the side. Oddly, the product and shipping boxes were unharmed. How could a physically damaged product make its way into a pristine box? I'll leave it to your imagination. More importantly, the cosmetic damage was only the beginning. The machine powered on and we were able to set up a recipe, but when it was "go time" NOTHING happened. The motor did not turn and all we heard was a faint mechanical pulse and the odor of a malfunctioning motor. We watched videos, reviewed the manual, dove into the troubleshooting guide and still could not get it to work. The mfg guide tells the purchaser to contact Breville instead the retailer, so that's what I did. Instead, they immediately began processing an exchange. Initially, it went very smoothly. I received instructions and a pre-paid shipping label on the same day I called (12/26/23) and delivered the product to the UPS store the next day. We STILL do not have a replacement product as of 1/11/24. I contacted Breville yesterday only to be told that they "just received the product" and processing would take another 7-14 business days. Meanwhile, my wife still hasn't been able to enjoy her Christmas gift. We have several other Breville products (toaster oven, juicer, espresso machine, etc.) and have always been pleased. So far I regret this purchase terribly.
