This plain chocolate is a must for when making truffles, also good for tempering (my first time doing so). Excellent tasting and you can taste the quality difference. Made dark choc truffles and they went down a treat with the family so well that I forgot to keep a couple back for myself! Lol. I would definitely buy again.

Honestly, I bought the Callebaut 811 as a curiosity. According to Callebaut's website, the 815 has 21.3% cocoa solids and 37.1% cocoa butter; the percentages for the 811 are 19.4% and 36.6%. The food scientist in me wanted to see just how much of difference the slight variations in both overall % cacao and ratio of cocoa solids to cocoa butter make. Although I've only done one comparison, the 815 gave a better end result after tempering. The flavor difference is subtle, but detectable. Anyway, it was an interesting (and yummy!) comparison.

Callabaut is my favorite for making ganache, truffles and molded chocolates. The pieces make quick work for tempering because there is no chopping due to the size of the callets. The quality is excellent, they melt perfectly and the texture makes my chocolates perfect every time.

I have been using this Chocolate for about 6 years now and we love it. My husband is allergic to any domestic chocolate but not the European chocolate. These Callets make the best chocolate chip cookies and I use them to add to muffins as well as brownies. They give everything a wonderful taste. I have also melted them to make genache and it comes out wonderful. I love Callebaut products. Try their Belgian Cocoa, it is amazing for baking cakes and brownies.
Love this chocolate. It's so versatile, and I use it for pralines, cakes and cookies. The callets melt perfectly anf the flavor is superior with every application. I get the highest quality of products and so many compliments.
This is my go-to dark chocolate for everything! It tastes great and melts easily and smoothly. I prefer the less sweet qualities of dark chocolate and this is by far the best quality dark chocolate I've found.
What a dream to work with. Never should have began my journey with garbage craft store 'chocolate' and molds for mommies. If you want quality you have to start with quality.The melt was so simple and since it is dark, there is more cushion for mistakes in temperature. My first pour into a professional mold left me so satisfied.Flavor is as expected. Dark bitter basic. A perfect staple. I can't wait to find the right brand for flavor oils (like peppermint) and mimic some of the greats with this dark chocolate. Look out andes, I have world wide chocolate my side.
During a recent vacation in Brugge, Belgium, the hotel I was staying at served this hot chocolate for breakfast…once sip of it and I was amazed of the delicious flavor! Hands down, the best chocolate flavor, ever!While I was skeptical about buying chocolate online, I am very happy with the purchase. The chocolate arrived on time, not melted, ( I didn’t request special handling to prevent melting) very well packeted and the quality and handling was as I expected it.

They are so creamy and the texture is soft and smooth. They are wonderful for making ganache or candy and they do very well in baking. I use them for my chocolate chip cookies. They are also great in homemade trail mix. They were packed well and shipped fast. I had paid extra for special packing to keep them from melting now that the weather is warmer. These chocolate chips from Callebaut have a tendency to melt easily so outside of the colder months it’s best to pay extra for protective packaging to keep them from melting. This is the perfect chocolate I make French silk pies out of it it's absolutely to die for. You can't go wrong with buying this chocolate. Highly recommend. The texture is very smooth and the chocolate just lingers.
