This Global G-16 Cook's Knife 24cm is ideal for the preparation of larger pieces of fruit, meat or vegetables. The razor sharp blade is made from Cromova 18 Stainless Steel, Global's own mix of steel that contains 18% chromium which aids stain resistance and molybdenum and vandium which both help to maintain the sharp edge of the blade. This is then ice hardened to Rockwell 56-58. The dimples on the stainless steel handle provide extra grip for a safe and comfortable hold.Global Knives were first designed in 1985 by Komin Yamada and pay tribute to the Japanese Samurai sword tradition. The two most distinguishing features of Global knives are their edges and the way in which they are balanced. The Global G16 is an extremely versatile knife due to its length, blade shape, and weight. Its very well balanced, the weight feels perfectly distributed.This is unquestionably one of the best knives you can get in this price range.This is my goto knife for almost everything. Its excellent for chopping and slicing vegetables, herbs, greens, and meat.Due to its thin blade profile and edge, the G16 is not particularly great for extremely thick or hard things like butternut squash or chicken bones. For those tasks I prefer a thicker knife with more heft to it, or a cleaver.I have owned this knife for more than 3 years and have used it almost every day since I got it. I also own its little brother, the 8 G2

In the words of a culinary instructor I lived with for a time: "If I were going to work as a professional cook in some restaurant starting Monday, I'd get a set of Globals. They're great if you want a good knife that doesn't need to be babied."Spot on. My wife and I got a couple from our wedding registry, and I bought a few more when this sale went live. Some people don't like the dimpled steel handles because they can get a little slippery compared to wood, but that's the only downside I can think of for these things.

The G2 is the standard ChefsCooks, but its too short for some tasks. The 27cm G17 can seem a bit unwieldily and mismatched to smaller chopping jobs. The G16 is just right. It slides through sweet potatoes or jicama rather than needing to chop through like with a shorter blade. Its long enough to take down a butternut squash. The extra length lets you keep good tip contact with the board while getting enough height to brunoise an onion with a simple rocking motion. It covers the full width of most cutting boards. Because its Global, its super sharp. Whoever thinks they have to use a serrated blade to slice tomatoes hasnt used this knife. Dont even get me started on the balance... perfection I love, love, LOVE this bladeI was a Henckels fan, but am now fully converted.

I have actually purchased two of these knives on the advice of Uncle Tony. The first, I gave as a gift to my brother in law who loved it. I used it too and liked it so much I bought one for myself.It?s incredibly nimble and sharp. The truth is that I own chef knives that cost 5 and 6 times what this one does and it does just as good a job. The minimalist handle is easy to hold and you will never miss a more traditional handle.

This, simply put, is the greatest knife Ive had the pleasure of using. It surpasses my Global G1, which it was bought to replace, and Im thoroughly pleased with it in every aspect, including the price which is still far lower than elsewhere. For just over 100, I doubt it can be beaten. Clearly though the price warrants its use in a professional capacity or by a very keen amateur with a considerable amount of disposable cash for this sort of purchase.If you can justify the price you will not be disappointed.

Global knives arent good. Theyre not great. They arent fantastic, whatever you may have read. They are simply BRILLIANT. You pay a lot, but you get a lot. I have some that are years old, and still as sharp as a razor. I can slice soft tomatoes like paper, I can cut cheese, bread, meat, whatever, perfectly.They are a joy to hold, and perfectly balanced. And they even look cool. Ive got Sabatier, and ranges of Austrian and German knives, but NOTHING comes close to Global. They are truly exceptional.Youll only need two. A big, big cooks knife which will cut spuds, loaves, steaks, fish heads, the lot, and a 7 inch paring knife for fiddly stuff. For the extra step, buy a flexble filleting knife. My favorite knife

I have various quality knives by different companies. The Global chef's knife has become my easy favorite. I want to get another couple of them in due time. I first heard about Global when my parents bought a full set. Then when my brother got married, he registered for a set as well (which I got for him!!). Finally I decided it was my turn to try one out! It is really a pleasure to use this knife. It is on the lightweight side, compared to the Germany style knives, which I really enjoy. It's more nimble and easier to work since it is light. But light does not mean flimsy. It is superb in quality while being lighter in heft than others. Give it a try. Highly recommend.

Nice and sharp

I don’t know why I didn’t try these knives before it’s my loss. This knife is extremely sharp and very light. Not weak but light weight, just what I need so my hand does not gettired early. I love prepping but sometimes with my heavier knives my hand tends to tire out not so with these. I love it. It’s the first knife I reach for when I start cooking. Glad I made this purchase. I can slice grapes paper thin lol not that there is a need to, just fun to do.

Global knives are the BEST! I have purchased other global knives and used daily for everywhere. Easy to use and care. Tips, make sure bring it to a professional cutler and sharpen it with a sharpening steel at home once in a while. You can use it lifelong!
