This Global GS-38 Paring Knife 9cm has a deep, rigid blade which makes it ideal for peeling hard fruit and vegetables. The spearpoint tip is perfect for removing imperfections such as eyes on potatoes. The razor sharp blade is made from Cromova 18 Stainless Steel, Global's own mix of steel that contains 18% chromium which aids stain resistance and molybdenum and vandium which both help to maintain the sharp edge of the blade. This is then ice hardened to Rockwell 56-58. The dimples on the stainless steel handle provide extra grip for a safe and comfortable hold. Global Knives were first designed in 1985 by Komin Yamada and pay tribute to the Japanese Samurai sword tradition. The two most distinguishing features of Global knives are their edges and the way in which they are balanced. The edge of a Global knife is ground into a steep, acute angle rather than a bevelled edge as is the case with most European produced knives. This straight edge results in a dramatically sharper knife which stays sharper longer. The handles on a Global knife are made from hollow stainless steel which is then filled with just the right amount of sand to create the correct balance. I purchased 2 pairing knives. I purchased these knives approximately 10 years ago and liked them so much I decided to order more. I have difficulty with dexterity of my finger, and find the knives easy to use. They have a nice handle. I would recommend these knives to family and friends. I purchased at William and Sonoma.

I've been wanting a Global knife for a while. Paring knife was 1/2 price at Sur La Table, so I pulled the trigger, and I was not disappointed.It's a meticulously crafted knife. Feels great in the hand, and is basically as sharp as a scalpel. Beautifully balanced in the hand, the Global style of handle is great -- the scalloped metal handle seamlessly blends with the knife, keeps the handle from getting slippery, and is easy to clean as a bonus. I plan on adding the chef knife soon, even though I have a nice Henkel.

This is my second "Global" brand of cutlery. I enjoy it thoroughly. Global brand is made in Japan, not China! PROBLEM: W-S no longer offers blade covers.

Great knife...but packaging was way more than necessary. The knife was already in its original packing (a well wrapped small box about 6x12in) but was then put in a HUGE brown box stuffed with eco-friendly brown paper. Williams Sonoma should do better with their packaging.

I simply love these knives! They are easy to use and very sharp. They have made slicing and dicing vegetables, meat, fruit and bread easy and fun. I can easily re-sharpen them with a steel and my work is done in half the time it took me before. I have six of them and everyone helps make my work easier.I can highly recommend the Global knives.M. Knife does not fit my small hand properly

The shape of the handle works fine for my husband, but not for me. I don’t like that space between the handle and the sharp portion of the blade. This knife feels awkward in my hand. If I try and peel vegetables for very long, I get a cramp in my fingers. Wish I knew which knife to purchase. I need a good paring knife.

I'm very pleased with this knife. It's quite sharp, well weighted, and fits my hand well. I can also use this to finely chop small slices of vegetables including onion and celery. I'd absolutely recommend this knife and this brand.
