Razor sharp and well balanced. Sooo much better than the grocery store paring knives I've used for years.I'm gradually replacing all of my kitchen knives with Misen knives. Liked everything about the first paring knife which I bought for my wife. She likes it too very much. Misen knives are truly heavy duty professional grade knives. They will last in a busy residential kitchen forever. Because of the many flavors a paring knife can be involved in preparing just one meal I bought her a second one so as not to contaminate the flavors. We now have the Chef knife, Serrated knife, two Paring knives and a 1000 grit sharpening stone. We are happy with what we've gotten.If the steak knives had thin but heavy Nisen quality blades we would buy 12 of those.

I cook. A LOT...the daughter of a professional, who learned how to cook multinationally from mom RIP. And my father could throw down also....so I understand that the kitchen only needs a few really important things, no short of cutlery and especially good sharp knives. I saw Wisen and bought the Pairing and Chef Knife duo...and while I initially just wanted the pairing knife, I was overjoyed when I received both and saved myself the trouble of going back to purchase the other. The craftsmanship of Misen is wonderful. I knew immediately that I had to use my knife glove for this product because it's wonderfully sharp and precise. I actually was gifted a very expensive chef's knife from Japan and I can say that even this knife's weight and precision is smoother and cleaner.With the pairing knife, ease of slicing (I've used it on cucumbers, onions, tomatoes, cheese, apples, pears and potatoes) and it's clean and crisp.I couldn't be happier and recommend them highly for the knife enthusiast that feels its not worth spending several hundreds of dollars for a knife of quality.
I bought Misen non-stick pan and chef's knife couple of years ago. Awesome products. This year I added the pairing knife, spatula, peeler. The pairing knife is super share and my expectation is that it will hold its sharpness for a long while, I will have to sharpen eventually. The peeler is easy to hold and peels well even with the plastic blade protector on it! Makes peeling hard squash easier.The spatula is firm and stirs, pushes and can "scrapes" food off the bottom of your non-stick pans without scratching. Love my pants and knives from Misen!
This is a little larger than a paring knife, and a little smaller than a petty knife. The result is, in a word, great. Small enough to be light and maneuverable, but large enough to be capable of the tasks of both knives. It works equally well for peeling apples (paring) and trimming pork butts or briskets for smoking (petty). And just to see how it would do, I also used it to chop up some veggies (which I use a chef or santoku for normally) - it did amazingly well. In my opinion, Misen is going a great job of updating older designs and making them even better. Great little knife!
Good knives cost money, but they don't have to require a second mortgage to buy. Misen knives are exactly that. Great knives at a reasonable price. The paring knife is well balanced, meaty enough for someone (like me) with bigger hands. The knife has the added advantage of a slopped blade that allows a more comfortable blade grip, essential for peeling, scoring, and cutting without touching the cutting board, something that one should never do with a paring knife. My only nitpick is that the handle is quite straight. Some curves would probably improve grip, but this is not a deal-breaker.
My daughter got me a Misen Santoku knife last year and I love it so much that this year I got her the short chef's knife and the paring knife. She told me the other day that cutting raw chicken was almost shockingly easy, "like cutting through butter." She cooks a lot and is wowed by these knives. The price can't be beat and although my husband and I have several older knives of very good quality, the Santoku is the one we compete for. I also have to comment on the excellent customer service. The first knife I ordered evidently got lost in the Christmas rush and after several quickly-answered emails, I was sent a replacement knife which arrived the day before Christmas. Thank you Misen
It gets a 5 star from me. I have a magnetic knife holder on the wall behind my sink. It usually has 7 small knives Hanging around. So many because when I am preparing my food I might go through 5 or 6 depending on their ability to cut whatever I'm cutting, This little paring knife has caused my old knives to go unused, So, now their are 2 small knives on the wall. The Misen is my favorite and my "Old Henry" paring knife I keep out of loyalty. The Misen is lightweight, easy to grip and makes small work of cutting and preparing foods. Thanks Misen.
Being a former chef I know the difference between a good knife and a not-so-good knife. Misen's paring knife is so much better than just "good!" It's great! Perfect size, weight .... and man can it hold its edge! I stopped asking "how can something so good be so inexpensive" and now go with the flow. At full price it's a steel (pun intended) but with the 20% off discount which Misen seems to offer every month or so - well, now I have 2. As well as at least 1 of every other knife they offer with the exception of the steak knives. Those I shall get in a couple weeks!Misen, keep doing what you're doing cause you are doing it right!!
