This is a beautiful line and if you are buying your knives in the collection individually, you need a bread knife. It is one of the often used knives in my household and I since I serve bread with every meal at the table, I want a great bread knife to put out as well. The serration on this is fantastic and glides through your artisan breads like butter! Some serrations tear the bread, which makes a huge mess, but the serration on this kinife is sharp and perfect. Cuts a perfect slice every time.

I work as a chef at Dillards Corporate, and have been using this knife. It is a wonderful knife for long term use when it comes to handle comfort. Most of my knife set is shun and I love D shaped handles, but this one is the best of both worlds. When I pick it up it just feels like a professional tool. I love it. I wish I could get a chef knife from miyabi….. maybe in the future….

Kaizen II is made from FC61, an extrememly chip resistant steel. That is especially important with the thin blade and thin edge angle of Japanese knives.It's a true Japanese knife with a beautiful Damascus design and D shaped handle. The handle is made from Micarta which is a linen and resin mixture that looks and feels like wood but has the moisture resistance and durability of a synthetic material.This is a great bread knife because it will slice cleanly through a hard loaf of bread without tearing. It's also great for slicing and large melons.
One great bread knife, comfortable D-shaped Pakka wood handle, I've enjoyed fit and finish of this knife. It is not by surprised that this knife is versatile, great for leafy vegetables and cuts through meats, breads, bagel, and baguette effortless. It is fabricated from FC61 fine carbide steel blade core, its 48 layers of steel surrounding the core create the beautiful Damascus-design ensures durability. This knife is the best bread knife I have ever used ! The design, balance and ease of cut is exceptional. I make mostly crusty white bread loaves or sourdough bread . Both have hard, crusty crust which is normally a problem with a run-of-mill bread knife. With the Riyobi 5000FCD it isn’t a problem. I am sure that this knife will serve me well for many years and will be a favourite. I absolutely love top quality craftsmanshift ( as well as a good bargain) . Regards, Bill Walker.
High end, made from scratch by hand! This is a super steel,super sharp.The design of this blade will cut through foods that have a harder exterior and softer interior. This blade will not shred or tear the softer insides. As you would expect from a Miyabi,Every detail is considered. All edges are rounded and flush!. The 32 layers of damascus protect the steel as well as add beauty! Amazing knife at a great price!
If you liked the sharpness of the original Kaizen, but found the handle a little foreign, then it might be time to reconsider the Kaizen line. The handle and the bolster were beefed up to provide more feedback with a firm pinch grip. The 49-layers of steel are hand finished to an extremely sharp edge that holds. It has a double Damascus pattern that is stunning.This serrated bread knife holds its sharpness. Use it for bread, heirloom tomatoes, even ripe peaches and pears. You will love it. (Also very good at cutting through grinders, hoagies and subs.)
Stunning knife. I make sourdough every second day and this knife makes slicing it a dream. It cuts through the crust like butter but does not squash the soft crumb. It’s really quite amazing.The packaging is rather disappointing (but that’s not Myer’s fault). This knife deserves something more special than a crappy plastic box, especially for the price.
The pictures advertised a beautiful knife with a "symmetrical cutting edge." Received the knife with only one edge sharpened like the cheap knife it was supposed to replace. Not a big deal, but I have to send it in and wait "10-12" weeks for the warranty process, which is pretty long. Wish I had not purchased through the Zwilling website.
