We've been using the Koda 16 for a while and when this new model came out I wanted to give it a go. The heat control is precise, so whether you're aiming for a crispy Neapolitan-style pizza or a perfect steak, the results are consistently excellent. And the included digital thermometers (ambient + probes) takes the guessing out of grilling and gives you more control over your oven temp and the food doneness.Fourth, Pizza. Speaking of pizza, the oven delivers an authentic wood-fired flavor that’s hard to beat. The high temperatures it reaches create a perfectly charred, crispy crust, while maintaining a soft, airy inside. The pizza is ready in 1 -2 minutes, and the results rival those of any restaurant. You need to get the temperature just right so you don't burn the pizza or leave any parts uncooked. The trick that worked for me is have the oven at full heat when you don't have a pizza in and decrease the temperature by 80% or so when you put a pizza in. This way, you get a perfect leopard spot bottom and no burned toppings.A note on the accessories:I bought the 14 inch perforated peel, the turning peel, the Pizza Dough Boxes, the prep lid, the cover, the oven brush, and the modular table large. I have used all of them, their quality is also excellent and they help with your cooking immensely. In terms of importance I would rank them as such: Perforated peel, Modular table, Cover, Turning peel, Dough boxes + prep lid, oven brush. The reason why brush is ranked so low is because the oven cleans itself! Crank it on high for 1 hour and all spots are magically gone! Impressive!Overall, this high-end outdoors oven is not only a showpiece for your outdoor kitchen but a true game changer. I have been able to bake several times with the new Koda 2 Max and I am really impressed with the new oven! I didn't expect much to have changed apart from the extra space, but the changes to the gas system make a big difference. The pizzas are baked very evenly and the flame is not as direct as on the Koda 16 (or other ovens) which means that the pizza can stay close to the flame for longer and doesn't burn as quickly. In addition, the oven holds the heat incredibly well, so that many pizzas can be baked quickly one after the other (and side by side). This is where the not so good started to show up. The oven is designed with top heat only, there is no heating coming from under the stones. This is fine for something like neopolitan pizzas where you want extremely high top and bottom heat for a short period of time. The stones themselves have rather limited thermal mass. Doing a 2 minute cook for a neopolitan is no issue. However, doing a 5-6 minute cook for a moderately thicker NY style pie starts to become an issue.Ideally a NY pie is cooked in a deck oven with consistent top and bottom heat for the entire bake, at a constant temperature somewhere between 550-600. Since the cooking stones in Koda 2 Max don't hold a tremendous amount of heat, you tend to need to overheat the stones before launching your pie. The stone temp drops rather significantly over a 5-6 minute cook of a large NY pie. If you're looking to average, say, 575 on the stone during the back then you probably need to heat the stone towards 650 before launching your pie. In turn, instead of a nice even bake on the bottom, you get something that's uneven with a fair amount of burnt spots that are unpleasant. It's not the desirable leopard spotting on a neopolitan pie. Because the bake takes significantly longer on a NY pie, you tend to get legitamitely burnt spots.I also tried baking 16 inch sicilian pies in the standard pans (the ones that are a bit thicker than your standard home baking sheet). This was a real failure. The stones simply have no where near enough thermal mass to get the bottoms where they need to be and there's really no getting around that since there's no bottom heating element.Basically, the oven really struggles with bottom heat, getting worse as the dough on whatever you're making gets thicker and as the form factor gets larger. Anything 16 inch+ in diameter and it's going to be covering enough of the cooking surface that hardly any heat from the burners is making it's way into the stones. If you're cooking a 20 inch pizza then you must have essentially all of the bottom heat you're going to need in the stones before you launch, and that's an issue given the thermal mass of those bottom stones is lacking.Another thing you'll find is if you actually try to cook a 20 inch NY pizza, you're going to have your crust sitting really close to the fire sources on the two sides of the oven. And if you're trying to do a 5-6 minute cook then you're pretty much guaranteed to end up with burned spots around a fair amount of the crust. I was rotating my pies constantly and still ending up with burned crusts by the time the middle of the pie was baked. I can't recommend doing a 20 inch pie, you gotta go smaller to avoid the burned crust and to have a decent change of having enough heat in the bottom stones to get the whole pie baked in an acceptable way.Overall, this oven is great for neopolitan pies but really fell short on everything else I wanted to try, including the 20 inch NY pies they advertise it for.

I purchased this oven along with the large modular table (which arrived first). I assembled the table after receiving a heavily damaged package. I found the stainless steel table top to be dented and several areas of the powder coated legs to be chipped and bent. I contacted Ooni and they immediately shipped all replacement parts for any of the damaged table, free of charge and shipping. They were absolutely great.My Koda 2 Max arrived the following day, once again in severely damaged packaging. I opened and was able to determine that the oven was undamaged, however. It takes at least 8-10 attempts to get the other burner to finally function. It is extremely frustrating to say the least. I have used multiple FULL tanks of propane, and it is the same result.I contacted customer service and they were responsive. They did however want me to film my process of lighting the oven. I follow the directions exactly as written, and am at the point now where I am ready to give up. I had hoped for a better user/owner experience with an item that costs as much as this one does. My hope is that there can be a resolution that doesn't involve me having to take the time and effort to box this massive oven up, ship it back, and get a new one.I don't know that I could recommend this oven or other Ooni products until they can get the shipping game together, and resolve this issue with the burner.
Been making pizza from scratch for several years now, but this is my first dedicated pizza oven and it’s a total game changer. It heats up and recharges quickly, and it’s very easy to control how much flame you need for the top to cook the way you want it.Our first bake was a success, but the second bake was absolutely phenomenal once I worked out a couple kinks. Easily the best pizza we’ve ever made at home.Having it hooked up to the gas line on our back porch makes it super easy to set up, which means we are more likely to use the oven more often. Kind of defeats the purpose of that feature, so I probably won’t use it. Despite this, I still give it 5/5 stars, and we look forward to years of homemade pizza in this oven.
This oven is the best Ooni oven yet. Cooking the best pizza I possibly can has been my main hobby for years, and I'm aware most commercially produced pizzas ovens. Based on my experience with other ovens I've used and other ones I haven't, but I've "studied". If I remove the stones, it weighs approximately 60 pounds. It's awkward, but I can still manage to load it into the back of my compact SUV by myself. With two people it's much easier to move.Cons:The oven radiates a ton of heat to the area directly in the front of the oven, making the oven not nearly as energy efficient as it could be if it had a vented door, or something similar. Because of that, you'll want longer pizza peels to avoid overheating while working the oven.The gas dials are very sensitive, so it's easy for 1 side to heat a little more than the other if you're not paying attention and don't double check the gas dials are both running the same amount of flame. It would be nice if they would develop an adapter to turn 1 knob to keep both sides at equal flame.The oven's insulating ability seems to be on par with all other Ooni ovens, which means the exterior of the oven is not safe to touch once it has been preheating more than a few minutes. This is understandable though, as it means the oven is smaller and more portable.The oven is advertised as being able to achieve 950f. I've ran it at max flame on both sides for over an hour and the highest ambient temp I've seen is 910 on the right side, and an average ambient temperate of 901f. I double checked with support to make sure I had the oven positioned correctly for air flow and that I was doing everything right. The stone temperature was averaging approximately in the high 800s F, but some areas were peaking around 930F. This isn't a big deal for me as I don't cook close to that temperature normally, but I wanted to make a note of it for anyone who does.All in all, the cons of this oven are all minor and seem to be reasonable trade-offs in design to keep the size and the cost of the oven down. If you want an oven for entertaining a crowd, I don't think there is a better option at $1000 or less.

Cooked like a dream. LOVE the dual flame and ability to adjust both. It’s so versatile, great for steaks on high heat one side, and slow roasting veg on opposite side. Cooking two 12inch pizzas side by side was so much fun. This oven just WORKS. Normally it takes me a few bakes before I get used to a new oven, but my first bakes came out like I’d been using it for months. Shout out to the excellent design team that created this beauty. Love this pizza oven. I have been using the Koda 16 for two years and needed to be able to do multiple pizza's at a time but didn't have thousands of dollars to invest. For the price, the Koda 2 Max nailed it. Initially had problems with keeping burners lit but then I read that after it lights, you need to keep the button depressed for about 5-10 seconds before releasing it to heat up the sensor and that worked.Haven't been able to get it to the 950 F temperature but that doesn't matter to me because at 950, I'm starting fires with my pizza's. I like a 650 F temperature range, which is very easily attainable, and that makes perfect pizzas. I ordered my 2 MAX about an hour after they went on pre-sale status... placed the order immediately. To my surprise, it came in a little over 2 weeks rather than a month or more. Easy to assemble and packaged just like our previous Ooni Karu 16, very well. The oven is fabulous. Large but heats so evenly with the full length double burners, one on each side. It heats within about 25min to 475C and will inch up to 500 C if allowed (in summer weather). You may need to turn it down from max heat once at temp. The oven will cook two pizzas simultaneously - we have tried that a couple times. You can put a BIG pizza in there, for sure. Lighting burners: You need to light one, then turn it down to lowest setting before attempting to light other side. This is a simple technique and once I figured it out, it has worked every time perfectly. The new thermometer, which goes via bluetooth to the Ooni APP is great, too. Easy to use, color screen, and wonderful to be able to monitor inside with the iphone. The oven has a large footprint so I built a new, granite-top heavy duty table for it with heavy duty lockable wheels, similar to the other one that housed the Karu 16 and my Big Green Egg. You want to follow Ooni recommendations about height so you can more easily see and launch, retrieve pizzas. Wonderful! Also be sure to adhere to requirements about side and rear away from anything combustable cuz this sucker gets really hot on the outside compared to the smaller Ooni ovens. I HIGHLY recommend this oven.
I also own a wood fired oven but it’s tricky to use for multiple pizzas on a party with many people. The game changer of the koda 2 max in my opinion is having two separate fire at the side, and a size that allows enough space between them to cook the pizza at perfection without burning it.The not so good stuff:In UK winter it takes a lot of time to go at temperature (50 min at max power) . Summer may be better, I have never tried. - I wish it came with a door to close it up during the warming up phase.The door will definitely not be needed for pizza once it’s at temperature.Also the probe works with normal battery and is probably not designed to stay all winter in the garden with the battery on.
