Shun Classic Series with 31 blade shapes Made in Japan Nakiri | DM-0728 Blade 6.5" / 16.5 cm, handle 12.2 cm The Shun Classic series combines centuries-old Japanese samurai forging with modern, technically sophisticated manufacturing processes. The result is a series of extremely high-quality Damascus knives, refined down to the smallest detail and consistently focused on consistent sharpness. The knives are therefore ideal for professional use. The Shun Classic blades are attractive thanks to the characteristic, silky-matte pattern of the 32-layer Damascus steel composite. VG MAX steel with a hardness of 61 (±1) HRC forms the core of the entire blade, right down to the cutting edge. Encased in 32 layers of Damascus steel, the knife achieves its unparalleled anatomy with a stable blade that is both hard and elastic thanks to the two components. The Shun Classic blades have a double-sided grind. The slender handle, made of durable pakkawood, features a traditional Japanese chestnut shape. High-quality resins added to the wood make the material particularly durable and moisture-resistant. Its typical chestnut shape, thanks to a slight edge on the right side, ensures a comfortable and secure grip while cutting. The full tang ensures stability and balance.

These are beautiful knives - we have a few of them already, and I wanted to add the Nakiri to our collection. My wife loves using them - they are VERY sharp and maintains the edge if you take sensible precautions (ie. use a bamboo board, not glass / steel or ceramic and don't put them in the dishwasher). We had a fun session with different fruits and vegetables - tomato / capsicum (simply glides through almost under gravity), pumpkin and sweet potato - very easy. We haven't had this particular knife for very long, but have had the other Shuns for over 4 years (Chef / Santoku / Utility / Parring), using them daily (particularly the Santoku and Utility). We also use the honing rod every fortnight or so. I made an enquiry about shipping and packaging that Peter's sales team replied to - the knife arrived 2 business days after payment (to Newcastle) which was excellent. You do need to be careful to not let the knives sit wet or in a sink of water (which is dangerous anyway) - dry them straight away and keep them in a block. They are relatively expensive, but our purchase of this knife was really as a result of how satisfied we've been with the others - considering that they're hand made, they look beautiful, they're well supported by the company, and they give my wife a lot of enjoyment when she's preparing food for the family - we're very happy with them. Peter's price [particularly] and postage was a bonus.

I have been eyeing a nakiri (and santoku) for a while. Being an amateur home cook, it's hard to justify the price of these knives, however I decided to not wait anymore and make this a me-gift. Using my nakiri takes food prep to a new level. I have not developed the same speed as I do with my chef knife, so it's taking me a (cautious) learning curve to get used to this type of blade, and it's extreme sharpness makes what was my sharpest knife before, look dull.Super happy with my purchase and looking forward to further growing my knife handling skills

Beautiful new tool for my kitchen!

Purchased this on sale after hearing Alice Waters rave about this style of knife on her MasterClass. It's super sharp and makes quick work of chopping and slicing. I'm enjoying using it and know it'll be a tool I continue to use for a lifetime.I gave this knife 4 stars instead of 5 because for the price and considering how sharp it is, I shouldn't have to purchase a separate cover -- it should have been included with the knife (that said, the Messermeister 2x8" knife cover fits this knife perfectly).

Bought this knife as a gift for Christmas. My brother needs a new knife and loved my Nakiri. I make a Chinese chicken salad that requires a lot of slicing / chopping and this knife never lets me down.Easy to handle and extremely sharp. It?s perfect!

The weight, the width, the length, the little bit of rock, the d-shape, the steel . . . everything came together for me when I stumbled upon this little gem.I had been researching nakiris for months trying to find the right one that would be somewhat stainless, but easy to sharpen, without breaking the bank.I knew of Shun and the quality, but had been too deep in researching the smaller Japanese knife makers. Well, there sure are a lot of great knives out there and it was difficult to decide until I found this one on sale.As soon as I unboxed it, I knew that this was going to be passed down to my children. I will take excellent care of this work of art. It cuts like a dream, shines with a gleam, and fulfills a dream: sheet cutting cucumbers for sushi. Exceeded my high expectations

I own a few different Shun knives including a 7' Santoku Shun Elite that's always been my all-around go-to first choice. The more I read about good Nakiri knives, the more I was intrigued. I'm a longtime vegetarian, and Nakiris have a rep for being great for working with veggies. Sur la Table happened to have a sale going on and, as I'm stuck at home like everyone else during this pandemic, I'm doing more cooking and figured I'd give it a shot. Wow. It really lives up to its rep - superb for any task involving veggies. Blazingly sharp, of course, but the long, flat part of the blade means even speed slicing never leaves "hanging chads". The slight taper at the front means I can still (slightly) rock it for quick mincing and dicing. The deeper cutback to the handle allows for great finger position and grip and, even though the handle isn't quite as substantial as my Santoku, it's still really comfortable and feels solid and well-balanced no matter what I'm doing. Yup, this is my new go-to knife!

Fantastic vegetable knife

I have several Shun knives and every single one is a pleasure to use.I chose the 6.5 inch Nakiri for use with vegetables which by far my most frequent and largest volume of knife work. This blade is amazing. Extremely sharp of course, comfortable handle with sufficient rise above the board and an edge that lasts if used properly. These knives are expensive and need to be used properly but are a very satisfying tool to work with.

Best knives I have had the pleasure of owning! One word that comes to mind is precision. Not many knives come close to a Shun! They are gorgeous, razor sharp, well balanced. It's a great addition to any kitchen. Weather it's a home kitchen or a commercial kitchen, this knife is sure to be your new favorite. Thank you Shun! Keep up the great work!
