Shun Premier 20.5cm Kiritsuke Knife
The Kiritsuke is known as the Master Chef’s knife in Japan. This blade can be used for any task on which you would use a regular chef’s knife. It can julienne, dice, or brunoise vegetables with ease, and it is the perfect choice for cleaning and cutting boneless meats, particularly fish. The straight edge makes this knife ideal for push cuts and slicing. Once you use the Kiritsuke, you will find yourself reaching for it more than any other knife. The knives in Shun’s beautiful Premier line are crafted much like the hand-forged knives from ancient Japan. Each blade undergoes at least 100 handcrafted steps, but unlike the blades of ancient Japan, Shun’s Premier line features knives made from their VG-MAX super steel. The cutting core of each blade is designed to take and hold a precision edge, while the layered Damascus cladding supports the blade and provides stain resistance. Premier blades also have a hammered finish that acts like hollow-ground cavities in order to reduce drag while cutting. The handles rest comfortably in either hand, while the end-caps provide balance and beauty.

The knife is sharp yet light - everything I am looking for in a premium knife. The only thing I'd like to point out is that vegetable doesn't slide off as I thought it would but overall I'm super happy with its performance and slickness. I highly recommend.

I bought this as a present for my mother and this is now her favorite knife to use. We both enjoy cooking frequently and this knife is better than the Henckels and Wusthof knives we own and we both have gone through a number of those knives. This Shun from the premier collection stays sharper longer despite daily use and can cut through difficult vegetables and meat which the other two brands mentioned frequently couldn't despite trying all the different styles and lengths. This knife is more expensive but it is the only large knife you need. I bought one small Shun knife from the same collection for fruit and other smaller items and love it too!

This was a gift for my son who is a serious private affair only chef. With all the expense involved in starting a business like this he couldn't afford a set of knives of this quality. I knew what he wanted so I gave him this knife as a present. He absolutely loves it. As his business grows at the rate it is now he'll be able to afford a full set. In the meantime I'll keep after his wife to tell me which knife he wants next. He doesn't want me to spend that kind of money on him, but what else are dads for, right?

I already own a 3 shun premier knives, and my wife is a stickler on everything matching in our kitchen. I was worried that the handles wouldn’t match perfectly to our older knives but was happy to see that they are perfect! As for functionality, I already knew how great shun knives are, and this one met every expectation I had! I prefer this kiritsuke for all of my veggies over my chefs knife every time. Would not necessarily recommend for beginners, but great for anyone with some experience with knives.
Shun knives are among the best! I bought this knife for my son who has quite a few Shun knives. He carries them wherever he goes if he thinks he'll be preparing a meal. He is a very very good amateur chef and takes pride in the tools he uses to prepare the meals. All the best,Richard
Extremely well made, razor sharp, feels great in the hand and just beautiful to look at.Fast shipping combined with excellent communication and order updates made buying this knife a pleasurable experience.
I wanted to try this knife because of the beautiful design, word of mouth and reviews. It is a great knife for a light hand. Unfortunately, the tip broke off within the first week at my house. Multiple people used it and no one is confessing! We will be sticking with our more durable Wusthof.
Very pleased. I'm familiar with product. Didn't disappoint. Very pleased with the Discount. Delivery process very pleased. Thanks heaps.
the sharpness, the point, and the shape of the blade together offers superior control in cutting to remove any meat with crissel or fat. This knife enables precise cutting. Just watch it because it will nick a finger in a nano-sec. jaksf
I have an 8" chef classic Shun knife I purchased a while back. I thought my Classic was sharp. This knife is sharper by far. I also feel the Kiritsuke is easier to handle than my chef--my new fav
