I love my Santoku knife, it is beautiful and functions very well. But it is VERY fragile. I very slightly knocked against my very soft marble countertop and got a significant nick in the blade. That has never happened to me before with any of my other fine knives, of which I have several. About 20 minutes with a very fine whetstone cured the nick, but I am now quite cautious when I use it.

My husband and I recently bought this and we wish we could give it a 6 stars. The quality is superior and well worth the price. We love the blade hammered look and wavy design. The handle is a beautiful and ergonomic wood. Cuts through anything with ease. First Shun, won't be our last.

This is our first Shun knife and we are very impressed with the quality control and the overall quality of the product. Out of the box it is sharp enough to slice through a regular sheet of paper with minimal pressure, the blade needed no extra honing what so ever. As the blade is sharpened very thin, this knife must be used with a slicing motion rather than chopping, that is how many other inexperienced users reported chipped blades. Overall we have had this knife for over a month of weekly usage and it has outperformed many other similar knives we have from competitors. Highly recommended!
It has been a couple of decades since I had a higher end kitchen knife; I should not have waited so long! I really like the Santoku knife shape and use it as my go-to chef knife. This knife makes easy work of cutting and dicing and slicing- I can slice off paper thin slices of tomato, lemon garlic... all with ease. The handle is very comfortable me as I have average size hands. The weight feels feather light and (and I heard this to be true of Asian cutlery) it allows a bit of a relaxed grip but you still have full control. I also picked up the Nikkiri (sp) knife and it is very good as well. The Pakkawood handles are handsome and I believe they will be MUCH easier to keep up than my wood handled knives.
I have always loved Santoku blades for their range of everyday use, but this Shun blade is both highly useful as well as aesthetically attractive. The damascene blade is gorgeous and holds an edge well, and the hardwood handle adds to the knife’s beauty while making it easy to handle. Already have several Shun premier knives and plan to add to my collection.
The balance on this santoku is really good. However, it is slightly heavier than other santokus. If you want a traditional santoku that can only handle veggies and boneless meat you might want a lighter option. But, if you want a workhorse Chef's knife replacement, this is an EXCELLENT choice. Plus, don't overlook the steel. VG-Max at this price is an unbelievable value. The super thin profile of a Japanese knife means that the quality of the steel is essential. You can go with a cheaper steel and out of the box it will have the same great sharpness of a Japanese knife, but it will dull and possibly chip very quickly. My new Shun knives are beautiful, functional and easy to hold. I will always reach for my Shun knives whether I'm slicing vegetables, cutting meat or slicing anything. My paring knife is perfect for peeling potatoes and other veggies.
