The Tojiro Classic (formerly DP) Straight Paring Knife is used for paring, peeling, slicing, and trimming small fruits and vegetables. The Tojiro Classic series features a full-tang and 3-ply clad construction with a core of VG-10 super steel encased by two layers of highly rigid and rust resistant stainless steel. The Rockwell Hardness of 60 is hard enough to hold an edge, but easier to sharpen than super hard steel. The triple riveted traditional style Micarta handle with bolster contains heft and balance and the closed bolster collar allows for full and complete sharpening of the blade. The thin blades, feature a razor sharp edge that is hand-honed and sharpened by skilled craftsmen in Japan.

A fantastic little knife that makes quick work of smaller kitchen tasks. Just do not get a finger on your free hand in the way of the blade! The balance and overall weight are perfect for what we use it for and it fits nicely and securely in the hand.

I love my new knife. It is perfect in my small hand, is wicked sharp and the handle is very right in my grip. It cuts like a dream for small jobs. The blade is sharper than anything else I have ever used, except for my Tojiro DP Gyuto. I am left handed so choosing a knife with a double bevel is important.
its easy to use and easy to controll, really good for small task.. the handle is good you can controll it with precision. blade is good as well just take care and maintain its sharpness
