I find I reach for this knife over all my other ones. It chops and slices well and not too long of a knife. If it gets so it won’t slice through a tomato easily I sharpen it a bit over a stone and it is good to go.

Quality knife for for most tasks, especially in a commercial kitchen
This is the perfect knife for frequent cooking. It's sharp, durable and inexpensive. Weight is nicely balanced, perfect for cutting up onions or even slicing meat. After buying this and realizing the high quality I then purchased all Victorinox Fibrox knives for my kitchen. You can't go wrong with this Santoku.
The knife is light, well balanced and razor sharp.
This is possibly the thinnest, sharpest and lightest kitchen knife I've had. It's easy to overlook how well it cuts because it is so light but it's a very effective knife.I wish there was a same knife with a better handle material.
