I've owned the 18" smoker for over eight years. There is one must-have item Weber shockingly doesn't even manufacture or sell: a grease catching round (pizza) pan that sits on top of the water pan. Without that, the water pan becomes a *horrible* hard-to-clean mess. Also, always line the (pizza) pan with foil. This is my first smoker as I dive into the wonderful world of smoking. So far I’ve been able to smoke ribs , chicken , sausages and veggies. All have come out absolutely amazing. I’m glad I got the mid sized one and am overall happy with it. My only feedback points are - they could’ve made the one door on it more secure as to not leak so much smoke . Assembly instructions were easy to follow and uncomplicated. For my first cook, it took a little bit of adjusting to get the temperature in the smoking sweet spot but that was expected. Filling the ring and using the minion method, I got a good 8 hours of cook time.There is plenty of rack space for bigger cooks. Using the water pan helped to keep temps consistent. The access door feels a little flimsy but is not necessarily a flaw. It allows easy access to both the charcoal and the water pan. It was a breeze to add more water and wood chunks to keep the smoke going.I look forward to using this again and again in the future. Great piece of equipment and I am very happy to have it in my arsenal.

I finally bought one of these after wanting one for years and I can say that I am incredibly impressed so far. - Clarification: I am NOT a paid reviewer -This smoker is built well and in USA.I'm not recommending this, but the cool thing about the 14" is that you can actually put the included cover on, stick it in the back seat of a vehicle (upright), put a seatbelt on it, and take it anywhere. I've hauled this in my compact car to about 5 state parks and kayak on a lake while I cook some ribs.Everything comes off the grill cooked to perfection and juicy and the smoker is efficient in my opinion. It's not big, so 18 briquettes can last you 5 hours no problem. In fact I'm still on the first large bag of charcoal yet. The dual-deck design is big enough for two sets of ribs (cut) and a loin plus some potatoes. A whole chicken or turkey would be no problem on this. I can't imagine needing more space unless I'm cooking for more than 6 people.If you need to add charcoal, you simply pop the access door open and add maybe...like...three or four briquettes if needed.Perhaps I am looking through rose-colored glasses, but this smoker really does seem like the pinnacle of convenience and design and I would recommend it as a first and last smoker grill to anyone looking for one. It's a shame I waited -this long- to finally buy one really.

Lower tech is still awesome tech. The original design of this model is still on point. The water pan is a critical part on startup to smoking/cooking. Keep an eye on the water level to keep up humidity inside and temp moderation stable. I recently top racked three bone in turkey breasts. Brined and rubbed. The cooking instructions/briquette/charcoal consumption is an important reference table. You really do need close to 100 blocks for poultry (and the fact I had 22nd of meat). Starting with the Weber chimney, and letting a good base of coals to develop takes 25-30 mins ideally, before the middle ring is placed on the base. Don’t rush your coals. Using two Weber chimneys would speed things up. Smoke wood consumption is low. 4-5 chunks of applewood was plenty. My ... MoreLower tech is still awesome tech. I have used a Weber Performer Charcoal Grill for many years and decided it was time to purchase a charcoal smoker. I chose the Weber because I've been so happy with their products and excellent warranty.I gave it four stars because all the lower air vent tabs were bent up and flattened apparently during shipping. I was able to bend them back but they don't seal well now. Also the Door which is made of soft aluminum had to be bent back in shape to get a decent seal. I'll probably need to have those parts replaced. There was no apparent outer damage to the shipping box upon delivery.So far I smoked a small Brisket which wasn't too bad for my first try at smoking with the WSM. This smoker performs very well, and in general it lives up to the hype. HOWEVER...whoever designed the method for rolling the edges of the sections had their head up their ash pit. The top fits INSIDE of the barrel, and the barrel fits INSIDE of the base. So whenever it rains, the base fills up with water. Why in the world isn't it the opposite, so that the top fits OVER the barrel, and the barrel fits OVER the base to shed rainwater instead of funneling into the base???? That seems so obvious that I can't believe they didn't account for that. (You can't put the cover on when there may be some hot coals left in the fire pit without risking a fire). For what i paid for this smoker i really cant complain. I picked it up on a clearance sale. I was looking at the 22 inch model instead, but for less then half of the price I went with this one and I am not disappointed. It was well packaged and easy to put together, took about 30 mins with the help of my boy. It was just easier to have a little help. I fired it a couple days later for the first time. I used a chimney starter about half full over a almost full basket of coals, poured in the water, (2-1/2gallons) adjusted the vents like the manual said and it went right to temp in about 15 mins. This smoker held temp over the next 8 hour ... MoreFor what i paid for this smoker i really cant complain. I picked it up on a clearance sale. I was looking at the 22 inch model instead, but for less then half of the price I went with this one and I am not disappointed. It was well packaged and easy to put together, took about 30 mins with the help of my boy. It was just easier to have a little help. I fired it a couple days later for the first time. I used a chimney starter about half full over a almost full basket of coals, poured in the water, (2-1/2gallons) adjusted the vents like the manual said and it went right to temp in about 15 mins. I was really surprised by that. Put a 6 or 7pound pork butt on and put a couple probes in, one in the meat the other on the grate. This smoker held temp over the next 8 hour or with little adjustment. The probe on the grate and the on gauge on the lid didnt very from one to the other by very much. When done i still had plenty of coals left and the water bowl was still half full. I figured i could have have cooked for several more hours without adding to either. Which leads to the only thing that might be a bit difficult to do is to add water. The side door isnt quite high enough to get water in the pan, unless you open the lid and pour it from the top which the you loose heat, and have to pour around what you cooking or take it out. I guess ill cross that bridge when i come to it. Meat came out falling apart and juicy. I cant wait till i have time to put it in use again. Over all a very well built smoker that's easy to use and produces results that even a novice or pro would be proud of. And if it's like my other webers will last. Im very pleased with it so far and recommend it to anyone.

First of all, I am a Weber sheep. I own a half dozen of their products and would highly recommend them all.I had an electric smoker for almost 30 years that finally died on me for good. I had decided several years earlier when I thought my electric was going to crash that I would go to a charcoal smoker when I bought a new one. I researched pretty much everything out there in a easy to use, easy to maintain temp, ease of cleanup, and talked to folks who owned and used different makes and models. I heard a lot of deferring opinions on all of the brands, but the one consistent from the Weber Smokey Moutain Cooker owners were consistency and desired results of the final product.
