I was looking at an offset smoker to complement my Weber Genesis and komado type smoker. A friend suggested I consider the Smokey Mountain as a lighter alternative to the offset. Did a lot of research and decided it might be a good choice. The hard part was what size. Went with the 18. Overall quality was excellent, easy to assemble and easy to use. Much easier than the komado. Only issue O had was the mid section was out of round. I have owned the Genesis for more than 10 years and have never had any issues. My chance to see if Weber support was as good as I’ve heard. It is indeed. Excellent. Very happy with my smoker. Ironic, I participated in a company rib cook-off and all participants had Webers!

I bought my WSM 14.5" smoker to supplement my existing 22.5" WSM because I wanted a smaller unit that would be more fuel-efficient when performing smaller smoke jobs. As always, Weber has consistently demonstrated that they are able to create a product that merges functionality with simplicity which is why I chose to stick with the trusty WSM series of smokers over other brands of charcoal-based smokers. The unit comes well packed in an ingenious manner to minimize the amount of cardboard and space needed to transport the cooker. Assembly was super easy and was completed with a basic wrench and screwdriver. Starting up this cooker is EXTREMELY easy b/c of its diminutive size. Simply load up approximately 5-6 lbs of charcoals (not exceeding the height of the coal ring) and place a fire lighting cube in the middle of the coals and light and wait approximately 20 minutes and you're more or less ready to smoke! Don't let the small size of the 14.5" WSM fool you into thinking that it can't cook much! This smoker has dual 14.5" cooking racks and I've EASILY smoked 2 - 7 lb briskets without feeling cramped. Other capabilities include being able to smoke 2 racks of ribs (you have to get a little creative and roll the ribs to fit because you can lie them flat). Alternatively, I can smoke 4 small full-sized chickens or 2 LARGE cornbread or mac and cheese dishes. PLENTY of space to accommodate the cooking needs for families of 4-6 people. As far as cooking ease and consistency, the cooker (permitted it is set up properly) will hold temperatures consistently permitted it isn't cold, rainy, or windy. This is a single-walled cooker so external environmental influences can impact the performance of the cooker. My suggestion is to try to find a sheltered location for this cooker and it will pay you back with fantastically cooked meats that in my opinion, trump the more commonly sold "pellet fed" smokers. Heat control is easy and a load of coals under mild weather conditions will yield enough fuel to burn for 6-8 hours before a fuel top-up might be needed. When you're done cooking, extinguishing the coals is done by simply closing off all the vents and letting the cooker cool for at least 24 hours - charcoal can remarkably hold a lot of heat and can burn for a long time so it is best to make absolutely sure that the coals are out. Cleaning the cooker is super easy, simply soak the small cooking grates in your sink and scrub clean, dump the ash out of the fire bowl and place the included cover over the cooker. No need to scrub the inside of the cooker - the more you use it the better seasoned it becomes. Another benefit of this cooker is that it is so darned cute looking and its tiny size occupies very little space in your yard, deck, shed, or garage. I use this size of cooker the most and anyone that is considering the WSM should stop waffling and just get it!

Do it the same day you order your Smokey. It will save your life and experience with the product. I tried using mine before I installed that, like other people will attest I dropped the lid day one it dented in the handle and the weld spots have been rusting away ever since. It's a must have almost to the point it should come with the product. Also familiarize yourself with the minion charcoal smoking method, look it up, use it with this smoker. With the minion method and fussing with the vents the smoker works really well and holds temp really well, but if you want a game changer order a BBQ Guru fan system. It is a time and hassle saver and wished I bought mine 5 years earlier! Also get a temp monitor for the grill and meat from maverick or thermopro something like that, make monitoring the food and pit temp easy peasy from indoors. Buy the lid hinge, charcoal grate and thermometers at the very least. You can buy the other stuff later if it starts adding up too much but trust me the money is well spent and I full heartedly recommend those products with hundreds of personal uses for them. This thing makes amazing BBQ and is easy to use. Pressure wash the thing when it gets dirty, works great to clean it easily.

My chance to see if Weber support was as good as I’ve heard. It is indeed. Excellent. Very happy with my smoker. Ironic, I participated in a company rib cook-off and all participants had Webers!

Don't Think About Buying One - Get One!

I am new to everything smoking, grilling, etc. Never ever did this before besides my pellet grill (had for about 6 months) but when I tried my friends smoked ribs on his Weber Kettle, I wanted to do the same. Except.....all the reviews I read said to get the WSM....even my friend who made the ribs suggested the same. Haha! And let me say his ribs on the Kettle are amazing!! The WSM was very easy to put together. The fire mgmt for me was a bit tough because I'd never smoked before and I was running back and forth for every adjustment until my friend said to just let it ride and to expect swings in temp - it is a fire.I had tried cooking ribs on my pellet grill but I just didn't like the flavor - a bit hot doggy for me. Temp was spot on!!I am very happy with the WSM and I would highly recommend it to anyone! I read a ton about smoke leaks and such and in anticipation of that, I purchased and applied the Fireblack Gasket to the door (and shaped it a bit more) and to the top of the barrel. I have had zero smoke leak! My next go will be Beef Dino Ribs! I tried those on my pellet, too, and they had zero smoke flavor but a smoke ring. I will update my review, if I can, to let you know how those turn out but based on my first two cooks of pork ribs, I know they will be SUPERB! If you don't have a WSM, get one!

I've owned the 18" smoker for over eight years. There is one must-have item Weber shockingly doesn't even manufacture or sell: a grease catching round (pizza) pan that sits on top of the water pan. Without that, the water pan becomes a *horrible* hard-to-clean mess. Also, always line the (pizza) pan with foil. I would not recommend this smoker without that foil lined pan due to extremely messy cleanup otherwise.The smoker is high quality and maintains temperature well on its own in moderate ambient temperatures (~50°F and up).After use, remove *all* moisture before storing or else mold will grow in the smoker.My low design score is due to rain water seepage when in use and during storage with the included cover and also no grease pan.Nice to haves are:1. a ... MoreI've owned the 18" smoker for over eight years. I see quite a few reviews of people having a hard time either getting it up to temp or maintaining temp. Typically, this would indicate poor fuel. I use B&B briquettes and I have been able to run it for 12 hours at 250 with no issue. To get it going, I fill the ring up with a 17 lb bag of B&B (briquettes, not lump). I then place 5 fist sized chunks of post oak around the edge. I then take about 10-12 briquettes from the center and kind of make a hole. Those 10-12 briquettes then get placed into a chimney and light them. Once those are going, I dump them in the hole in the center of the charcoal. I then put the center ring on the smoker and place the empty water pan in place. I then fill it up with water (have your water on hand and ready to pour). When I get to about 220 or so, I close 2 of the bottom vents completely and leave the third open just a tiny bit, maybe 1/4". I just leave the vent in the lid open for the duration of the cook. Some things you may want to add to your arsenal include a digital thermometer. I have one that has 4 probes. One of them I use for ambient temperature. That is the one I pay attention to, not the thermometer that is provided by Weber. The other 3 probes are used in whatever I am cooking. I have had this for about a month and I have smoked 2 briskets at a time once and one in a cook several times. I smoke twice a week (once Thursday night for a Friday evening meal service and once Friday night for a Saturday evening meal service). One night I do brisket and the other night is pork shoulder. Both are long cooks. When I pull the meat to wrap, I also add some water. If I need to add fuel at the end of the cook, I use the door to assist. You can pull the top of the door out and the bottom part stays in the smoker. I then drop some charcoal in that way, kind of using the door as a ramp or funnel. This is an amazing smoker that is very easy to use. If you smoke a lot of meat, you may want to consider a fan control unit that will maintain the temp for the entire cook and also conserve fuel.I will concede that the door, when I first got it, was out of shape. I simply placed it over my knee and then pushed down on it with both hands on either side of my leg and got it into shape. It now fits as it should and I don't lose any heat there.

For the price, it's...okay. I would actually rate this a 3.5/5 stars. It does not hold It's temperature very well, especially when its chilly outside (50's). You might get an hour of consistent temperature but I always find myself having to feed it more fuel. I use lump charcoal or professional briquettes with a smattering of wetted wood chips. The water bowel always gets in the way when trying to add more fuel too, which is very annoying. The hatch style door is very cumbersome and never wants to latch easily/properly so you end up losing more heat while your fiddling around with it. An improved and more functional design needs to be addressed on the latter two issues. I've used my 18.5" WSM three times now - twice with baby backs, the third time a pork shoulder. My impression so far:LIKE:1. Sturdy and well-built. If you've used a Weber kettle it's not too much different2. Holds temps real well. Once you have your target there's very little fussing3. Loads of accessories online. I'll likely add castors because it's difficult to movearound4. Foods come out great - expected for a charcoal smoker5. Easy to add water, charcoal, wood chunks.NOT SO MUCH:1. The same as with the kettle it doesn't seal tight enough to shut down and preserveunused charcoal. It's better than the kettle but I have a PK 360 that seals like a tomb.6. Temp tends to creep up after 5 or so hours and it's not real easy to get it back downOverall the likes far outweigh the dislikes. It's easy to use, set-up and lighting is a breeze, once it gets to temp it pretty much stays there with minimal fussing, it comes with a cover, has a small footprint - it's a very nice smoker. You'll get dirty cleaning up (an ash dump vent would have been nice) and there's no place to put the lid, tongs, etc. (I bought a folding table from the Webstaurant store which was a great addition). You do have to have an internal thermometer because the included dome therm is 20 degrees low on mine, but that's no problem as we all presumably have a Thermoworks somewhere around the house. Make sure you get it covered before it gets wet or the ash pan will have sludge in it. I'll be buying the caster set from Cajun Bandit most likely and maybe the stainless door but I don't care about the smoke leak around the included door.All in all a real good purchase and I'd do it again if something happened to this one.

Great Smoker - smoked some chicken so far and it was fantastic! My wife filled up the freezer with more chicken and now I am booked for weekends to come...lol. The trick for me was too learn how much charcoal to put in for a complete smoke. Hickory works really good and it is large enough to accommodate one log per smoke! Now I have a Weber smoker and a Weber BBQ grill. Weber really knows how to make a good smoker/grill.I also purchased the Weber Connect Smart Grilling Hub that came with an ambient temperature sensor and a meat sensor. I purchased an extra meat sensor because there are two racks that do run at different temperatures - not much but there is a difference.It is a bit more work than the pellet fed grills, but the smoked meat tastes much better!

After 35 years of experience with the Weber 18" "Bullet", I'm using my new Smokey Mountain Cooker 22" for the first time today. As useful as are the 18" cookers (I have worn out many of them), it it a real treat to have graduated to the 22". Now there will be lots more room for cooking baby back ribs without being concerned that they will touch the sides of the smoker or be on top of each other. The most important improvement, though is the ability to monitor and control cooking temperature. The thermometer at the top is a big help, but better still is the rubber covered port for inserting thermometers to measure both food and cooking temperatures.
