This knife is quickly becoming a favorite in my house. My husband, who is not a cook, uses it for almost everything making a sandwich, cutting hot dogs, slicing the occasional vegetable. Every morning it slices either a banana or an apple. It holds it edge so well I think it makes him more confident in his knife skills.Professional S is terrific line of knives. They feature a traditional straight bolster and a slightly smaller handle. As a result they are a little lighter than the new Pro line. I have owned one of these knives for years (more than 10). It has performed year in and year out, and I cook a lot. I sharpen it maybe twice a year, hand wash it and it looks like I never use it.

Purchased this 10" Professional S knife for my husband. He's over six feet tall, and he's always complaining that the 8" chef's knife that we have is too small.He really loves how this knife fits in his hand. Nice grip and bolster that does not rub up against his finger. Longer blade makes it easy to cut and chop large quantities in a shorter time.Easy to maintain, just hone as you go, and no need to re sharpen for quite some time. Zwilling special formula steel makes all the difference in the world. Also nice purchasing a product from a company who's been around for so may decades.

I had my first set of Henckels knives back in 1986 when I was in my 3rd year in the restaurant business and learning to be a chef. I then vowed I would never go back into the culinary field because by 20 years of age, I was tired of it. I went into the infantry/artillery field in the USMC.Eventually I got out of the military and had my 2 daughters and my son in the way so I ended up falling back into the culinary world as a consultant and chef. I bought another set of Henckels... beautiful, classics. Years went by and I ended up divorced and my Henckels were gone.Now... I have started buying my set and my kids got me this for a Christmas present. I have and will always love my Henckels knives.

I am blown away by the Finishing on the Miyabi 600D Wide Chef’s knife resulting from the collaboration with Chef Morimoto. In comparing with my other high end Japanese knives Miyabi has taken the time to round and polish the tine as well as the point of the heel. The Damascus finish is beautifully done. The weight of the knife is substantial and perfectly balanced. This knife punches well above its weight for a six inch blade and has quickly become my goto chef’s knife
I purchased the 8" Professional "S" because I was sick of cheap chef's knives that need constant honing. It's well-designed, so my hand doesn't cramp if I need to cut for longer periods. I find it to be sharper than other chef's knives I've owned in the past, and it keeps its edge well. This was a purchase I would gladly make again and was definitely worth the investment.
The knife has lost its edge. I purchased the proper sharpener. Used it correctly. I took care of this knife, it was never used or stored roughly. It functioned well and I have enjoyed using it for the last seven years. I thought this was a lifetime knife (it's why I bought it after some research),. But I guess its "lifetime" was way shorter than mine. So I'll try the service aspect of this group, a warranty is only as good as those who actually execute the terms of that warranty. I will send a review of that when complete. Look carefully at the edge of the knife from the handle to approximately 3/4 the length. The edge is gone the entire length of the that portion.
For a relatively short chefs knife this has a full size handle that feels excellent in my hand. The handle has a taper at both ends and the top side has some subtle curves to it which I did not discern from the images. FYI, I have average U.S. male size hands. The spine is mildly rounded which makes a double handed chop more pleasant. I havent had the chance to use the knife for food prep yet. I did a few cuts through glossy magazine paper and they were smooth along the entire length of the blade. I also folded a piece of the paper over to make a rounded edge and the knife easily cut into that with both of them on a horizontal plane.
I love the Miyabi line, but Artisan has to be my absolute favorite. I love everything about this knife and proudly it hangs on the magnetic knife bar in my kitchen. I love the handle, the hammer blade with the traditional sharpness of a Japanese blade. Sometimes I like the smaller chef knife I feel like I have more control and if working with something on the more difficult side, I like to have that control. The Dshape handle fits comfortably in my hand so I do not get tired when working in the kitchen for longer periods of time.
I purchased this knife about a month ago and it is still very sharp with minimal maintenance. I find myself using this one as opposed to the rocking santoku for most jobs because I feel that I have more control with the smaller blade. The handle is very comfortable. Definitely very happy with this knife and would buy again.
This is the second knife of this style that Ive gotten and Im obsessed. I own the chefs knife and the paring knife now and I never use any of my older knives anymore because these are just that great. They easily slice right through anything and stay sharp for a long time
