I used this knife for the first time last night to make potato soup it is so sharp and beautiful. I've never had a blade this sharp. Wow, I am very pleased I bought it and hope I will find someone who can keep it sharpened.The potatoes did stick to the blade though. Maybe I'm doing something wrong? I love it anyway.

Beautiful knife with great performanceMiyabi knives are incredible pieces of art and this one particularly is no exception. Amazing to look at, great balance and incredibly sharp. I picked up this knife as a gift and the primary user is almost afraid to use it because of how well it works, as strange as it may be to say that. It genuinely is an heirloom knife, something that spending the extra money on will pay off over it's very very long lifespan.
