I have just bought this knife, as a gift for a nephew, so I cannot comment on how it cuts. My son however is a chef and he was greatly admiring of it and said it should be excellent. I will probably buy him one for his birthday now (giving him a coin to "purchase" it from me as he is a bit superstitious).

Purchased a good quality and very economical set of Tojiro knives for my daughter and while I was re-packaging them to ship overseas I realized that I had to have a set as well. Now I'm really pleased that I selected them as a gift and saw the quality and got to try the heft of the set. Very Impressed and planning to get busy with my new sashimi knife as soon as.
