Pork does crackle using the rack. Must be due to air circulation around the joint. Also no gravy/ fat burns on the roast pan, should’ve replaced our old scan pan some time ago.
I bought this product for myself. I was so thrilled with it I bought another one for my son who loves to cook. All I can say is that I wish I had this item about 40 years ago! It is simple wonderful! I have used it for roasting vegetables, baked casseroles (if that makes sense), and traditional roasts. It is easy to use and easy to clean. The roasting rack is wonderful: I had been looking for a rack for many years and since this came with the pan it is perfect! The medium size is a perfect fit in today's rather small ovens. If I had a bigger over I would have bought a second one as well. I have several scanpan items, including utensils and knives I. I rate this as highly as my santuko scanpan knife.
