And although my friend warned me to be careful, I eventually cut myself just as he had done.These knives need your respect, but they are a pleasure to use. I smile each time I take one off the rack. I bought the 210mm (FU-808) version._x000D__x000D_For me, it feels comfortable in my hand. It is not too heavy, not too light and evenly balanced. _x000D__x000D_The edge on this one was razor sharp out of the box, and I find that VG-10 steel holds an edge for a long time._x000D__x000D_I have bought a number of other knives at twice the price, and I have had to sharpen them a lot sooner than these knives. They can cut a soft vegetables with little to no effort. _x000D__x000D_Highly recommended.

Love the way it cuts, the feeling, the weight and how insanely sharp it is. I use this knife everyday and would highly suggest it as a great “main go-to” knife! Just be really careful, even if you slightly touch the blade, it will cut you.

My daughter requested a larger chopping knife and we decided on this one. The quality, balance and weight are very fine and of course the blade is sharp. This is our first (but not our last) Japanese knife!
One of the best knives you can get in this price range, arguably performs just as well as knives which are double or triple the price! Perfectly weighted for a pinch grip and comes razor sharp out of the box. I was debating whether to get a Victorinox, Wusthof or this and I couldn't be happier._x000D__x000D_Note however that this knife doesn't have a very rounded belly so if you are used to rock chopping you may have to adjust your technique slightly.
This is a really good value proposition knife. It had a solid vg10 core, which is the main reason I bought it. It's easy to sharpen, and holds a good edge. I went with the tojiro dp vg10 because of price to performance ratio, and the western handle is very nice, and I feel I don't need to baby it, like with other Japanese knives with WA handle, I'm always worried about ruining the wood.A set of Tojiro DP are super solid for anyone working in a commercial kitchen, or any home cook who wants great knives without breaking the bank.

Bought this as a workhorse knife for my kitchen and I’m not disappointed. It’s a kind of east meets west knife and seems a bit more robust than a traditional Japanese knife- perfect for my busy kitchen.Out of the box it was very sharp but after a few passes on my stone it’s razor sharp and has held its edge very well.The only downside is the fit and finish of the handle. It is in no way uncomfortable but an extra ten minutes polishing would have been beneficial. But, for an inexpensive Japanese knife what do you expect?!
The knife required some touch-up. Especially edges near the handle had to be chiseled - they were quite sharp out of the box. Also, the blade scratches easily. And I can see that it wasn't assembled very well because there are small gaps in the handle.And for some reason the blade chips. None of my other knives are chipped (even very cheap ones), so I blame quality of the blade. After sharpening it less steeply the blade doesn't seem to chip anymore.All in all it's not a bad knife. But it's expensive enough so that for next purchase I'll save up for something better.
