I'm so disappointed! I followed the directions exactly on the package to make gluten free chocolate cupcakes and they were a big flop. The cupcakes spread on the top of the muffin pan and stuck together. I had to bake them for 30 minutes in order to get the middles to set with toothpick test. As you can imagine, had difficulty getting them out of the muffin pan, even having used muffin papers. When cool and removed from the pan the tops stared coming off. I followed the instructions on the back of the package exactly. Only thing I can think of is I live at 5000 feet, should I have done something different for high altitude? I have other packages of this mix to use and would like some suggestions on how to make this work.

excellent baking mix for any kind of cake, birthday or just because! I love bob red mill's ingredients because we have many gluten free options! I've used this a couple of times and just love the simple composition of the ingredients! my cake came out fluffy and not a bit chewy. the package is conveniently designed. I use this brand often in my cooking!

I used this cake mix for dessert for a friend who has Celiac (I have Celiac also) and it was delicious. The cake as-is, is a tiny bit dry but it's actually not bad.The second time I made this cake, I added 1/2 cup of sour cream (mayonnaise would work also). Once mixed, I also let the cake sit for 30 minutes, to allow the dry ingredients to absorb the liquid. Doing these two things greatly improved the moisture and texture of the cake. It won't rise as a cake made with traditional flour will, but it's excellent nonetheless. I served this with a mascarpone frosting, ... This was just 'ok' for my family. We do not need to eat gluten free but I was just interested in trying it. I made it with oil (it says butter or oil). The taste was pretty good, but the texture was not cake-like. I found it matched well with whipped cream and berries rather than frosting as it had a more shortcakey/biscuity texture to it. It was good but I don't think I will buy it again.
I love this cake mix. I add a package of chocolate pudding and make this scrumptious dense Bundt cake with cream cheese frosting. I love this cake mix for easy directions and easy blending. Amazing for German chocolate layered cake. This is an official must have in my pantry.
We used this mix many times and have had consistent results. The crumb turned out really good - considered there's no wheat/gluten. The texture started to get slightly drier and drier as the longer you kept it after baked - if not toasted before serving. However it's consistently good after toasting even on day 4 (we store the loaf sliced in the fridge for a few days).
