I maintain an oven thermometer inside of the oven in all of my baking. The way this appliance measures temperature and sets the thermostat is different from previous ovens I have used. Initially I thought the device was faulty when I set the baking temperature to 130C. The temperature reading on my oven thermometer would shoot up to 160C and stay there. The Bosch hotline cautioned me that if they were to send out a technician and there was no fault with the machine I would be charged a hefty site visit fee. I eventually found out through experimentation that Bosch employs some kind of sophisticated solution. Typically when you set your thermostat to 130C you expect the temperature to drop when you put your food into the oven to bake. Bosch takes a different approach. The temperature in the oven will drop to exactly 130C when the food goes into the oven. I don't know how the sophisticated machinery maintains and checks whether food has gone in or not but because the way the temperature is measured is slightly different from a typical oven you may need to retest and change your existing baking recipes for various temperature sensitive types of cakes and other baking. Besides that, however, the appliance has been extremely fulfilling to use in both convection baking as well as steam and steam assist baking.

Best oven I've ever used

This is the best oven I've ever used. Gets to temperature quickly, telescopic rails bring the racks all the way out, runs very quiet, great info display, loads of hi-tech features to explore (loving the wifi and app integration). Baked a carrot cake today using the 'Assist' mode as I was curious to test the baking sensor functionality. Selected it in the menu, made no adjustments, just let it do its thing on full auto. Perfect result. Super impressed with the steam function and meat probe too. This is one highly versatile oven with loads of smarts and looks great.

Combi steam oven
17 January 2022

Whilst researching for an upgrade for my existing oven, I chanced upon combination steam ovens. This sounded good to me. I like to steam fish but they are often too big to do on the stove top. This Bosch oven had some good ratings so I went in store to check it out and placed an order. It was the right size to fit into an existing space. The oven is simple to use. With normal baking functions and steam only functions. I have yet to try the baking option with steam. My daughter thinks our dim sum steamed in the oven comes out perfect and is way better than when we try to steam on the hob. fish has been cooked to perfection. The thermometer used for roasting meat gave us a perfect roast pork with crackling. I'm so glad I bought this oven.

Excellent- Baking and Tender Meat
27 October 2021

Upgraded my oven recently, baked some bread and was extremely ahppy with the baked bread. Did some pork roast with the meat probe and was amazed with how juicy and tender the meat came out. Highly recomended to be used with the Home Connect App that makes cooking/ baking monitoring easy. Superior product quality and accessories that came covers all needs. Highly Recomended anyone looking for an upgrade to get this oven.

Extends the range of dishes cooked in the oven!
11 February 2023

A great addition to the kitchen for people who love to cook. Making Hainanese poached chicken, risotto and leche flan was so easy using the oven as a giant steamer. Reheating refridgerated left-over deep crust pizza using the steam reheat function for 10 minutes restored the pizza to just-cooked quality!

Great oven
19 February 2023

Lovely oven that has made me excited about cooking. Classes offered have been very helpful in understanding how to use the additional/new functionality. Shame a cookbook for the steam function that caters to our part of the world isn't available. Also, on setup we did the steam clean and the oven kept asking for water so, after 30 minutes that took four refills, 4 litres of boiling hot water poured onto the floor when I opened the oven door. This has ruined a cupboard below and had the potential to cause serious burns to anyone nearby. So a lovely oven I am looking forward to using but some serious issues we've needed to overcome as well.

Great oven but the manual is disappointing.

OK, it has taken a while to get used to this oven. It has a multitude of features and I am yet to master all of them. The steam assisted and full steam are remarkable. The control dial is criticised by many. I'd have to say that if you wash your hands before using it and pop it off to clean behind it occasionally, it works fine, though I would prefer a dial. The complaints of rusting are probably because the users don't wipe up the moisture after steaming and put the oven through its drying cycle. Similarly you must clean the bottom of the oven and door with a sponge and hot soapy water after each use.As far as functionality is concerned this biggest problem is the manual. It is unduly complex and should really summarise the rationale, settings, and adjustments for each function. The suggested settings for various types of cooking are OK but too narrow for the diverse range of foods and recipes in Australia. There are few online resources apart from a couple of dedicated generic contributors such as 'Steam and Bake'.My wife would love to get the written Bosch recipe book but it seems to only be available from the German distributor. All in all I am very happy with this new oven and would recommend it to dedicated cooks (even retired old blokes like me).

Simple to use
16 September 2022

Generally preferred the Steam assist pyro oven but wanted wi-fi functionality. I find the wi-fi features very useful, albeit limited. They're actually better than the advertising.Other than that my only beef is that for the first use, even though I cleaned the oven thoroughly before first use, I still got quite a plastics smell, but this dissipated after a few uses

Steam multi mode / multi function oven
29 July 2021

Approximately one month after installation, (June, 21) I am impressed with this multi-functional oven, Bosch HSG656XB6A/81. The 4D hot air mode seems significantly better than ordinary 'fan forced', because the shelf position is not so critical, allowing more food to be cooked at the same time. Lots of help / hints / tips, built into the colour control panel.Good points:a) Numerous 'Types of Heating' allow a wide variety of choice for the discerning cook. This will be too much variety for some users, who choose not to use the many features they have paid for, which, if used correctly, can improve the outcome of food prepared in this oven.b) The 'Assist' function actually works as proposed, with a bias towards meat dishes. This will be too much variety for some users, who choose not to use the many features they have paid for, which, if used correctly, can improve the outcome of food prepared in this oven.b) The 'Assist' function actually works as proposed, with a bias towards meat dishes. This helps users unfamiliar with the many modes of operation, to achieve consistently good results.c) The 'Baking Sensor' works really well; just select the type of food, to be cooked {cakes, pastry, pizza or potatoes} on the control panel. Then press start. The oven looks after everything thereafter; heating type, temperature & duration. Close enough to magic, for this reviewer.d) The various 'steam' functions work well. Especially for bread 'proving'. Suitable trays are supplied for steam cooking. An efficient range hood near the oven is a very useful thing.e) The 'meat probe' works well, with 3 temperature sensors, for reliable results. Apparently, voids inside the bird no longer upset the meat probe function.f) Other modes such as 'Sabbath', 'Sous-Vide' & basic WiFi have not been used, by this reviewer. Apparently, the full cloud / artificial intelligence WiFi functionality, seen overseas, in other models, is NOT available in this model oven, in Australia.g) The oven operation and options can be customised to each owners' preferences. Example, digital or analogue clock, etc, etc.Less good points:h) The Instruction Manual is difficult to comprehend, without intense, prolonged study. Possibly because this oven has so many overlapping modes and features. The manual is laid out and organised from the oven point of view, not the cooks' point of view. Example; The user will have a certain food to cook and wants to know what oven features are available to do so. But, the manual describes heating modes first, and , then the types of food suitable for that mode. No single page (or, index!) lists all the oven modes / features suitable for a particular food; poultry, for example.i) The 'Assist' function may work against cooking a whole meal at once, as the specific 'Assist' settings may not suit the cooking of the other dishes in the oven at the same time. Overall meal planning becomes more important. Use of the 'Assist' mode is optional.j) The danger of using silicon bakeware is understated. If used, apparently, it harms the baking sensor.k) The nonstick optional Bosch trays may not be dishwasher safe.l) The water tank, for steam operations, needs to be emptied & dried after each use, &, the oven then set on a 'Drying' cycle. After which, the door needs to be left open for a brief time.m) Allegedly, over use of the 'Ecoclean' function may shorten the life of the oven. The oven will remind the user when to use 'Ecoclean'.n) Descaling, after a certain number of steam cycles, is required. No substitute for (expensive) Bosch descaling solution is offered, or, a sample supplied. Perhaps citric acid is OK? Who knows? Local water hardness needs to be set on the control panel, at the time of installation.o) The 'Dishes' chapter of the manual is mis named. It should be 'Assist'.p) The oven package includes a free cookbook offer. Apparently, this cookbook does not cover steam modes of operation.q) Some terms used in Bosch marketing are not used in the manual. e.g. Perfect Bake, Autopilot, or, Perfect Roast. This makes a comparison of features between Bosch models, very confusing. On top of that, it seems that 'Assist' means 'Perfect Bake' in some other ovens, but this is not clear. In summary, good value for the high price, IMHO. In selected circumstances, the 4D hot air mode may allow cooking of quantities of food more often associated with much larger 90cm ovens.
