Global 13cm Cooks Knife GS-3
The Global chef's knife presented here is a professional and, above all, a versatile tool that will work perfectly both as a tool for slicing vegetables and meat and for chopping herbs. The optimal length of the blade with its pointed tip also allows for very precise work. This knife, like the other Global brand knives, is made of the highest quality materials. The blades, made of high-carbon Cromova 18 stainless steel (containing 18% chromium), are subjected to a freeze-thaw process, which causes a significant increase in the hardness of the steel (56-58 HRC), thanks to which the knives retain their sharpness much longer than products made of other alloys and become extremely resistant to rust or discolouration. Global knives are also characterised by a convex cut of the blade, visible in its cross section. The lateral surface of the blade from the back to the edge of the blade is a gentle curve, so that the blade slices much more effectively and products come away from the knife easily. All Global knives are carefully weighted and balanced so that they lie perfectly in the hand to make kitchen work easier. The smooth shapes and uniform construction make the knives from this manufacturer's range hygienic and safe. The numerous awards and the fact that Global knives are used by chefs all over the world, as well as the fact that the founders of the brand set themselves the goal of continuing the perfect art of forging swords for the Samurai and transferring it to the catering sector and the modern needs of users, guarantee full satisfaction with the product purchased.

I've wanted to try a Global chef knife since reading Anthony Bourdain's endorsement in Kitchen Confidential, and it does not disappoint. The Massdrop price made it a no brainier. My wife has even taken to it. I've been trying to get her to use full size knives forever, but she's always preferred dinky little paring knives. Now the Global is the first one she grabs.

In the words of a culinary instructor I lived with for a time: "If I were going to work as a professional cook in some restaurant starting Monday, I'd get a set of Globals. They're great if you want a good knife that doesn't need to be babied."Spot on. My wife and I got a couple from our wedding registry, and I bought a few more when this sale went live. Some people don't like the dimpled steel handles because they can get a little slippery compared to wood, but that's the only downside I can think of for these things.

It was a Christmas gift for my brother, who loves to cook. The first time he used it, chopping the carrots and parsnips for the big dinner, he yelled out: "boy this knive really makes it easy!" Last Sat, my Bae cleaned it and put it in the drain board tip down. He brought it in to her to illustrate how she was supposed to handle it.It is his first professional knife and he loves it! Great buy!

I've had this knife now for almost a year and it's my go to for cutting vegetables and fine prep work. Blade is angled very sharply which allows for accurate cuts without mashing delicate vegetables or fruits. Main critique is that it does not have enough support on the top of the knife if I am cutting through thicker cuts of meat or hard root vegetables.
I now have 5 pieces of Global equipment and this knife really is the icing on the cake. The weight, size and balance are all second to none, as is the ability to hold an edge. I own the Minosharp ceramic sharpener and hardly ever have to use it. Dont delay buy Global tody.
This knife looked really nice coming out of the box and had a pretty sharp edge, but as I started to use it, the weight is definitely shifted more into the handle than I like. It makes the tip feel a little harder to handle, and doesnt feel as precise. But the biggest problem I found with it is that only after a month of use its already staining and rusting, and this is stainless steel. So, I will be contacting Zwilling about this because that shouldnt be happening. I will say on the positive side though, this knife handles cutting large chunks of meat and lots of vegetables really well. The only problem Ive had chopping something is with slippery foods or onions. The only problem Ive had chopping something is with slippery foods or onions. In the case of onions, I found that while the knife can cut through them easily, the tip of the knife kind of gets stuck because its so thin and all the weight is in the handle. So I find myself having to pull the knife out with a little more force than I like.
I had and managed to loose one of these knives previously. I thought it was too expensive to replace but alternatives I have tried just weren't as good. Really happy to have another. This knife is sharp and I prefer using a knife with a shorter blade for most of the copping I do.
Thought about buying a set, but wanted to see if it was worth it. This is the only knife I use now. It is super sharp, and just feels good in the hand. I read a couple of reviews about it being slippery when working with poultry or the like, and I haven't noticed that at all. Great knife, not sure I need to buy a set now though cause this one seems like all I need.
I can't say enough about the Global brand. I loved the first Global knife I bought from Sur La Table (7" Santoku) so much that I purchased this little gem. It has become my go-to knife for a majority of jobs from cutting/peeling fruit & slicing meat and veggies. This little knife does it all, and cuts with sheer ease. Very balanced, nimble, lightweight and SHARP! If you've never tried a Global knife, I highly recommend heading to your closest Sur La Table to test drive one. You won't be disappointed if you purchase this knife.
This knife is amazing, sleek and so sharp. I sliced right through a lemon, with no 'sawing' back and forth. I look forward to having global knives for a very long time.
