The G-80 was purchased as a birthday gift for our Chef son along with a bit of overkill, a G-35 Chef's knife. He was certainly please with both and as he has only just started back at work I am awaiting for his professional feed back.

I had returned the ceramic knife that had broken and the staff couldn't have been more helpful and informative about the different features of various knives. My daughter said the only thing the ceramic knife cuts better is the skins of red peppers. Go figure! But it can cut butternut squash! Very sturdy and easy to handle!

Looks pretty, but doesn't cut all that well. My son recommended this knife to me, and I was disappointed. When he used it he asked "What happened to your knife? It doesn't cut very well."

Great addition to my knife collection. Handle is perfect for my small hand, light but so sharp makes any job easy. It is definitely becoming my favourite knife to use.

This is my 5th global knife. All are terrific but this may replace my Vegetable knife as my favorite. All Global knives are razor sharp and hold their edge for a very long time. Treat them well and they will last a lifetime even with heavy use.I highly recommend Global and and particularly this knife!

This was a Christmas gift for my wife and she loves it. We have other Global knives, but didn't have a Santoku. It fills the gap between the paring knife and the chef's knife perfectly. No complaints.

Very light and sharp

This was my entry into 'good' knives vs Canadian Tire type knives. I wasn't sure if it would be worth the money so I started with just one knife vs a set. I was told a 7" would be a good length as it could do 80-90% of what I would use a knife for.My experience has been that this knife is significantly better than cheaper knives. I tested all my old crappy knives against this one with pineapples, or cutting paper, peppers, etc and it is way better. What that means to me is no need to physically push down hard vs a gentle forward or backward motion and it's cut. The thing cuts apples effortlessly. This knife just cuts through the frozen chicken like it's room temperature. I wish I'd bought good knives years ago.For me (a man of average size), I find the handle of the Global to be a little small. I could see how it would be great for someone with smaller hands. I have since bought Shun knives (more expensive) and found those handles to be more a fit for me. I also found the Global all metal handle to be cool looking but not as much grip as I'd like. The knife doesn't really slip or anything but I am a little concerned it might so perhaps I have to hold it a little tighter to stop that from happening or perhaps it's just in my head.If you are a newby like I was, you will need to get a honing rod if you buy this knife. Admittedly, I was cutting pineapples with this but I started to notice (about a month in) that the blade looked like it had some chips or something. I learned they weren’t chips and that when you cut with a knife it bends one way or the other so a honing rod realigns things. Once I honed it, it went back to the way it looked when I bought it and it felt as sharp as when I got it.In summary, if you like western style knives, this won’t be for you. If you want a very sharp, very light knife (ie, Japanese style) and you don’t want to spend the extra money for Shun knives, this knife is definitely for you.

We've been using Global

We've been using Global knives for eight years now and they are unbeatable, all of them are a joy to work with. This is one of the most recent additions to our collection of seven and it's easily my favourite. I use it for most general purpose cooking, the wider blade is especially helpful for squashing garlic and carrying ingredients to the pan. My wife does generally prefer the smaller utility knives though. Global knives are very sharp when new and hold their edge well, though like all good knives they need re-sharpening from time to time. We had cause to test the lifetime warranty recently when one of our older knives snapped and are pleased to say that Global replaced it immediately without any fuss, a refreshing approach these days.
