I was given my cook's knife as a present about 23 years ago, quite shocked to see the price, but it is worth every penny. The chef Rachel Khoo uses one on her Paris kitchen series I noticed - her top tip with knives- when scraping chopped veg from a board, use the back, not the cutting blade. I use one of the cheap plastic handled with crossed metal bits sharpenersBeing disabled now as well as a bit Dyspraxic, I wear a knitted Butcher's glove on my left hand when sharpening, for safety. It can safely cut through the most solid of neeps, pumpkins, etc and is perfect for finely shredding cabbage

I have actually purchased two of these knives on the advice of Uncle Tony. The first, I gave as a gift to my brother in law who loved it. I used it too and liked it so much I bought one for myself.It?s incredibly nimble and sharp. The truth is that I own chef knives that cost 5 and 6 times what this one does and it does just as good a job. The minimalist handle is easy to hold and you will never miss a more traditional handle.

Lightweight Everyday knife

This one's the idea knife if you are looking to buy a general purpose kitchen knife for everyday use. It's perfect to cut veggies and for usual food prep. The sharpness is awesome! You wont regret the buy! Best part is that they have all other types of knives in the same design, so I can slowly start collecting the others too.

I don’t know why I didn’t try these knives before it’s my loss. This knife is extremely sharp and very light. Not weak but light weight, just what I need so my hand does not gettired early. I love prepping but sometimes with my heavier knives my hand tends to tire out not so with these. I love it. It’s the first knife I reach for when I start cooking. Glad I made this purchase. I can slice grapes paper thin lol not that there is a need to, just fun to do.

Sharp, Balanced, Comfortable

Beautiful, razor sharp Chef's knife that handles perfectly. Feels natural in the hand and slices true. This is not a general purpose kitchen knife: no splitting bone-in chicken breasts or cleaving hard rind vegetables like acorn or spaghetti squash. But chopping vegetables and herbs, cutting meat is a joy with this knife. Cuts through rolled basil leaves without bruising, slices tomatoes clean and straight. I will be buying more global knives.

Sharp, light, so easy to handle

I read about Global knives in "Kitchen Confidential". While I have other knives, German and Japanese, from Bourdain's description, it sounded like I should have one.It's beautiful. It's sharp, light, and amazingly easy to handle. Even after having my other Japanese knife sharpened, the Global knife does a better job. For example, I wanted to cut a salmon filet into pieces. This knife sliced through the skin as if it were slicing an apple while my other knives tended to struggle.

I have never owned such sharp knives. It is well worth watching the YouTube video about how to sharpen your Global knives by a wonderful old Japanese man known as Mr Global(Mino Tsuchida). I bought these as I found cutting Seville orange skins for my marmalade was a real chore as my knives needed repeated sharpening this year. It is said that these knives stay sharp for 6 months. They are expensive but my son has these on magnetic knive rack and I use his when staying with him. He has had his many years. Be prepared to consider buying a ceramic knife sharpener. He has never bought a whetstone as he finds his simple ceramic knife sharpener has remained adequate. Really, I need to review in 6 months again but I am pretty confident I have found the knives of my dreams!

Global knives are the BEST! I have purchased other global knives and used daily for everywhere. Easy to use and care. Tips, make sure bring it to a professional cutler and sharpen it with a sharpening steel at home once in a while. You can use it lifelong!
