Best for searing

Everything I've tried searing on this has turned out far better than I expected and far better than any cast iron could ever achieve. something about the soapstones' thermal properties makes the sear perfect as if it knows just the right amount of heat to conduct and radiate to the particular food item on it for the perfect Maillard reaction and never simply burns food like cast iron tends to do so often. Don't expect this to behave like a teflon coated pan, but rather like a good stainless steel one where when heated behaves as a non-stick surface for most foods.I do pre-heat it for ~30 minutes prior to using it and sometimes even longer than that and directly over the coals.Yes Kamado Joe had to send me 2 soapstones before they finally sent one that didn't arrived cracked in two, but I can understand this issue as this type of stone is super brittle and has to be handled with great care. When cooking with it, I rest it on one of the half moon grates so it has even support across its span.As a science and physics major, it seems to me that the main differences between a soapstone and cast iron, regarding their searing properties, are that cast iron conducts most of its energy but radiates relatively little of it while soapstone radiates most of its energy in the form of black body radiation but conducts very little of it which would explain the differences in searing qualities and making the soapstone a far superior material for searing food with radiated heat without charring it to death with conductive heat.

Purchased the big Joe soap stone. Arrived cracked as I feared. Submitted a support ticket with photos with proof of purchase, provided followup duplicates of said photos, and now 3 weeks later am being asked to provide proof of purchase before a determination can be considered. Considering the minimal packaging supplied with the heavy porous stone, I’m not shocked this isn’t a common occurrence, but I am shocked how disappointing the customer service response has been. Been waiting to pull the trigger on my BJ 1 for a long time, and sucks that this is the first experience that is delaying my family’s enjoyment of the new grill.

This product cracks! It’s not if it’s when! Read other reviews same problem with them all! I bought my first one and it cracked thinking I didn’t support it right or wash it to hard so bought another one never took the grill grate from under it full support and it still cracked! Great searing but it won’t last long ☹️

Think LONG and HARD about buying this item !!!
29 January 2024

The first stone we ordered was shipped and it was broken in half during shipping, which they replaced. The replacement soapstone that was shipped replace the broken stone, has a hole in it, and the company refuses to replace it. I have seafood allergies, and am very concerned about bacteria getting into the hole that we cannot clean out after use, Food borne illness from this stone is going to make someone in my family very sick. Plus Kamado Joe does not stand behind their products. This company will ship broken and damaged items to you and refused to replace them.

Zero for customer service
13 March 2024

I bought the wrong size and the company does not make exchanges. They only do returns and it will cost me $170 to return the item which is what it cost! Now I'm stuck with a ceramic stone that I cannot use nor will I get to use my grill. Also, their customer service is non existant.

Highly recommend this accessory. Cooks as well as my cast iron equipment and easier to clean! Have cooked all proteins and vegetables to perfection. My favorite accessory. Buy it. You won’t regret it.

Received this as a wedding gift and I love the soap stone. We eat a lot of salmon and this allows us to cook the salmon with ease without worry of it falling apart on the normal grill grates. The soap stone retains heat extremely well and allows the development of a beautiful crust on my fish. I have yet to cook steak on it but I've heard that it also creates incredible steak. This will be one of my next cooks.

[Rewarded Review] Versatile and effective
1 March 2024

The soapstone is a solid piece made of thick, heavy stone. It holds up the high heat and produces an excellent sear. But it is also great for grilling fish and veggies. I really like using it for that as it has no holes for asparagus or small pieces to fall through.

[Rewarded Review] You want this
2 March 2024

Purchased about a year ago. Have the cast iron and saw a YouTube video on the soapstone and steak and burgers. Awesome is all I can say. Cleaning is tricky and fatty steaks/burgers mean a lot of fat running off at one time so it tends to burn unlike on the grill where it falls on the coals and makes wonderful flavor. Just don't overload and you'll be good

one of the top accessories you need for your Joe
20 January 2023

I have had my soapstone for 1 year and have really enjoyed it extending my toolbox while playing with my KJ! I would rank it just below the Joetisserie & the new basket kit (completely awesome!) as my 3rd favorite accessory. My kids line up for the perfect smash burgers it produces and I use routinely for salmon and also makes for great seared scallops. As you can see from the picture, perfect sear marks and (mostly) non-stick...You should season with olive oil prior to adding the fish and then you are fine. Relax and give it the right amount of time to heat up and you will see perfect results every time!
