I've never had a knife this sharp. My others were more forgiving with touching the blade, so this knife took some getting used it. I cut myself twice while using it the first time and once while cleaning it by barely grazing the blade.It goes through root vegetables like carrots easier than I could have imagined. It almost feels like the carrots are soft as you make the cut. I also really like the size of this blade. It's perfect for everything I chop the most. Good value for the money, especially if you get it for 20% off.

I had a Misen chef’s knife and a Misen paring knife. One of my daughters, a really good cook, has a larger set and told me she loves the utility knife best — it’s shorter and lighter than the chef’s knife, and does everything the paring knife can do. So two in the shape of one. I ordered the utility knife and am really happy with it. My hands are small so the lighter weight and shorter length are good. I can do everything with it that I would use a chef’s or paring knife for. And of course it’s really sharp. I’ve used it every day since it arrived.

I bought this utility knife as a gift to myself. It was nicely packaged, and that was exciting. It looked gorgeous- also exciting. The first thing I cut with it was potatoes. It was a heavenly experience! The potatoes seemed like butter as the knife easily sliced through them. I couldn't wait to get to the onions and peppers! Tomorrow is Christmas so I don't know what all I'll get, but it's going to be tough to beat this knife as best gift ever!

Just the right size for small hands

I like the size and balance of this knife for my small hands; I use it daily. The only thing that would make all of your knives perfect would be rounding the heel of the blade, since the right angles are too sharp to be comfortable when the knife is grasped properly. Your price and quality are outstanding.Thank you for the lifetime sharpening service.I hope your paring knives will be available in blue sometime soon, since all of my other knives are in blue, and the set I gifted a friend is blue, and I would like to complete the sets.

Loving it so far

I've had this knife for about two weeks. So far, this things has met and blown away my expectations. I've gotten so used to dull knives that I managed to cut my thumb two days in a row in the exact same place with this one; evidently, I have developed a bad habit of slicing vegetables based upon having the blade just stop on my thumb. Obviously, I don't enjoy cutting myself, but finding myself with a very reasonably-priced knife that can do so is wonderful.My son came over yesterday and we tried out the knife cutting Twinkies. If you haven't has a Twinkie in a while, know that Twinkies are virtually bulletproof lozenges that pretend to be food; I honestly have no idea how something so resilient could actually be digested. Utility and Paring knives - a good 'pair'

I recently purchased the paring and then the utility knife... (thinking that the chef's knife was probably a shade larger than I'd really need). This was a good call, and I'm finding the combo of these two sizes very useful for day-to-day prep. Both are nicely balanced, have a quality feel, stay sharp, and mark a noticeable improvement on the aging knives I've been using. The paring knife is great for cutting fruit, mincing garlic and ginger, or other finer tasks. The utility knife offers all the leveraging power and ease I need for chopping a range of veggies, including those denser root veggies like carrots and beets. I'm quite happy so far with these purchases.

Very good knife

I think of this as a small chef’s knife, not a utility knife. But I knew that from the photos before I ordered, so no complaints.It’s perfectly balanced for my preference and is quite nimble slicing and chopping. The handle provides good grip and it arrived VERY sharp. I have another Misen knife, the santoku, I also like.Since this knife and the santoku are made of the same AUS 10 steel I have a good idea what to expect in that regard— it is easy to sharpen and will keep its edge as long as you hone it regularly and use it only on a good cutting board. No ceramic boards! And don’t use the edge to scrape the cutting board, either. That’s what the spine of the blade is for.
