Yes, the larger Chef's Knife is king but this shorter chef's knife comes in handy with so many other tasks in my kitchen. I find using it more often than the larger checks knife. Small kitchen, small jobs. It's perfect. Just take care of it like Misen tells you and it keeps its luster and sharpness. I'm giving one as a gift this Christmas, and maybe a few other Misen knives with it.

Well, it's basically another Chef Knife with about an inch shorter blade. It cuts the same, handles well, feels great in my hand, etc. But being a bit shorter, it is absolutely fabulous for those really precise cuts (such as slicing garlic cloves wafer thin). And it's lighter than it's full-size brother, so my wife can also use it with ease without tiring from the heft of a bigger chef knife. The short chef's knife is my go to knife in the kitchen. I spent a lot of time reading about other knives and for some reason I took a chance on Misen, knowing little about the company. Glad I did. Very fair price for a great knife. It is light and cuts through large carrots like butter. I feel like a Sushi chef when I slice cucumbers so thin I can see through them. Great knife.
I just love my new Misen mini Chefs Knife. I tried first cutting tomatoes and it was like cutting through butter without hardly even trying to cut them and sliced so thin you wouldn’t believe it. Next we made a 4 lb pork loin in the air fryer. I took it out and let it rest for 10 minutes went and grabbed my new knife and to my surprise I cut and sliced every inch of that meat with precision and pieces so thin you would swear it was done with an electric slicer. The crazy thing is I cut the whole thing with hardly any effort as the knife sliced through again like butter with hardly any effort whatsoever. I immediately cleaned sanitized and dried the knife and put it away. In conclusion I would have to say I’am just in love with this blue Misen knife. I personally ... I had one really nice sharp knife in my block and was looking for another, slightly smaller knife of similar quality. This was it. This knife feels sturdy, cuts very well, and stays sharp. I wasn’t as familiar with the brand, but I had seen other reviews and come across the brand in searches. I was not disappointed. I would recommend the knife and the brand!
My daughter got me a Misen Santoku knife last year and I love it so much that this year I got her the short chef's knife and the paring knife. She told me the other day with the short chef's knife that cutting raw chicken was almost shockingly easy, "like cutting through butter." It's not only sharp, but it's light, easy to hold and feels perfectly balanced. The price can't be beat and although my husband and I have several older knives of very good quality, the Santoku is the one we compete for. I also have to comment on the excellent customer service. The first knife I ordered evidently got lost in the Christmas rush and after several quickly-answered emails, I was sent a replacement knife which arrived the day before Christmas. Thank you Misen
