I love this amazing Bread knife. Have had the Birchwood chef for a few months and thought I'd treat myself to another pretty birchwood shape. First off, the handle is gorgeous! I know it requires a bit more attention because it is really wood and can swell and shrink if its wet too long,But that said, its such a beautiful knife I'd take extra good care of it any way! the longer bread knife blade is new to me and I am now forever a fan! It is lightweight but does the job as well or better than other knives. My hubby thinks the handle is a bit slight for him... Great he will stay away from my knife!

I just recently received this knife as a gift from a relative and let me tell you, it’s sharp sharp. I’m not a knife aficionado or anything but if it makes slicing through sourdough easier than blinking then I think it will solve most of your bread problems. This knife is also incredibly comfortable to hold and the weight is perfect. You can place the knife on top of whatever you’re trying to cut and it will glide through it with minimum effort or force on your end. Knife is a 10/10 without a doubt.

A good bread knife is a game changer! It slices through a fresh loaf of bread with the greatest of ease, not tearing or smashing. Birchwood does this while being exceptionally beautiful too!The birchwood handle is so unique. It is very comfortable with its traditional Asian D shape plus the birchwood material makes it very slip resistant. I love how the handle will become very personal as it absorbs oils from your hands and develops its own personality. The 100 layer Damascus blade is made from a very sharp SG2 steel core that not only makes it very durable but incredibly beautiful. If you want an authentic Japanese knife, end your search with Miyabi. They are made and sold in Japan as the premium knife.

Extremely happy with my purchase from House of Knives. Delivery was very fast and well ahead of the expected delivery date to the UK. My Miyabi breadknife arrive extremely well packaged, the knife itself is ergonomic and beautifully sharp. It cuts through even toughest bread easily and effortlessly. Highly recommended as are the others in the Miyabi Birchwood range.
The knife is so beautiful! I can not stop looking at it! It cuts amazing! And the design is amazing! I can't believe I have such a master piece now in my kitchen! :D
Give me our daily bread and I'll slice it so easily. Crusty or soft, no drag. Clean smooth slices.I fell in love with the Miyabi line the first time I picked one up. Miyabi Birchwood is a beautifully hand-crafted and made of the one of the best steels for kitchen knives. The smooth birchwood handle fits my hand perfectly; and the inset emblem is an elegant touch. But the part I really love is the blade. The exquisite flower patterned blades belie their hardness, their ability to keep an edge, their gleam. What a joy!
Customer service and details about the knife and its use was excellent. Follow up after purchase was also really good. The knife arrived very quickly and was well packaged. As for the knife it is a dream to use. Very happy with it.
This knife is beautiful. It is definitely a show piece that will impress your guests. Even the box is super fancy. It cuts bread as well as you would expect a $400 knife to cut bread. I can't comment on edge retention yet.I bought it on the knifewear website and was surprised at how slender the handle is. Its quite skinny. One point of disappointment was that this is actually a 230mm blade, not 240mm as stated on the website. It even says so on the box. I mainly use it for homemade sourdough and the extra length might have made me buy a different knife. I won't be returning it now that I have it though.
Versatile knife for all flour-based constructions, from bread to cake.It is so sharp, it will slice through strawberries sitting on whipped cream without submerging them in it. And through layers of cake without squeezing out the filling.I’ve been using it daily and there is no sign of reduced sharpness. Truly an excellent product. The birch wood develops more friction over time, furthering the grip. Its balance and provenance are evident from the first touch. Life should be full of things like these.
This is a beautiful knife and perfect for its intended purpose. I was reluctant to accept that a European manufacturer would do justice to Japanese knife standards but may be wrong in this instance. The Damascus blade looks beautiful and tears through any crust easily. The handle is beautiful and feels great in the hand. Perhaps the cross over of cultures makes very good sense for a bread knife, which isn't very Japanese typically, but is elevated to a new standard in this instance.
