I bought this as a gift of my husband but looks like I’ll need to get another one because we’re constantly bickering over who gets to use it. ! We also have the cleaver which is amazing but I love the curved blade of the chef knife. Great weight and super sharp, we’re looking to collect all of the Shun line of knives.

This knife is pretty, blade is the thinnest I've used. Brand new this is sharp. For a home cook maybe as sharp as any would need. The VG10 core is solid dependable steel and is easy to sharpen and holds an edge for some time. I love the profile, and the handle is a very comfortable size and shape for my medium sized hands.Cons. The top of the knife could have been rounded and or polished down a bit more. The hammered finish takes a bit more time to clean. Being that this knife has such a polished finish more maintenance and care is required to keep it looking so. It is also one of the more fragile knives in my arsenal. I would certainly suggest only those prepared to handle a knife with care to buy this knife. If you do you will have a great knife for years.

I recently bought this knife at my local WS in Upper Montclair, NJ to replace a badly chipped Wusthof chef's knife. The sales associate Tom (who happen to be a pro chef and extremely knowledgeable) recommended this Shun. Ok, got it home, gave it a quick rinse and started slicing and dicing leeks and potatoes. Well, the cliche is "cuts like a hot knife through butter" - well that is exactly what this feels like - so much so that I (slightly) nicked my fingers 2 times until I got used to exactly how sharp this blade - and the tip is. Far and away, the sharpest knife I have ever handled - so use caution as this is so much sharper (not necessarily better) than the German knives. I got this for my boyfriend, who was previously a chef, and he loves it! In addition to it looking absolutely beautiful (it looks great on display), it works amazingly well. He has predominately German knives in the kitchen, but I think this just made him a convert to Japanese. Its extremely sharp, has a great balance, and he loves using it. He would hardly put the thing down in the first 48 hours of having it, kept running into the kitchen to cut things...so I would say it was a success.
This is the best and sharpest knife I own. I have an exceptional selection of knives - including J. A. Henkel and Wusthoff- that I love. But this knife is remarkable. The width and sharpness make it amazing for slicing and dicing. Perfectly balanced. Beautiful to look at. Love it!
Good product, does the job. A very nimble knife for its size, good for a person who has a small to medium hand size. If you have a large hand, then the handle would be too small for you.. The knife is used for general preparation. Like all Japanese knives, care and respect should be exercised towards the knife. Don't push the knife beyond its limit. For example, don't attempt to cut a whole pumpkin with it. Hope this information helps.

A good friend of mine that I work in kitchens with recommended I pick up a Shun for some basic vegetable chopping, etc. (Take that into consideration, this knife cannot and should not be used to trying to break apart a chicken, for example.) and it immediately chipped, cutting carrots on the same wooden cutting board I've had for many years and used successfully with many knives. Not even a small chip, but an entire 1.5'' sliver of the edge flaked off. We received two of these knives as wedding gifts and both chipped within the first few months of use. Shun’s website is replete with warnings that improper use can lead to damage for which they are not responsible. We are not professional chefs but I do have several other good quality knives (including Global knives which I love) that have never suffered such damage.
I placed an order for the 8" version of this knife for my mom for Christmas. They sent me a completely different and cheaper knife (Zwilling 6" chef knife). I sent the knife back to process the return/exchange and they said "Sorry, it is out of stock now". The woman on the phone did not have any other option for me. No alternative, no exchange. Nothing. Completely unprofessional and will be the last time I shop at Sur la Table. Utterly disgusted with the poor customer service.
