Didnt smoke with it yet but the assembly and burn in went very well. Only thing I wish was designed differently is closer spec on smoke stack and design for securing legs and stack other than a clamp bolt design. I did use the door clamps and OK mod seals. Put the seals around both doors and between 2 halves of firebox and not between firebox and cooking chamber. Needed 2 rolls of seal ti finish but have plenty left over. Did not have any smoke leak between firebox and cook chamber without seals. Still have some leaking around doors with the seals but very minimal! My biggest piece of advice is use charcoal to burn in while following instructions. I did not have any bubbling or peeling anywhere. With chimney in traditional port and baffles out I used 1 chimney full ... MoreDidnt smoke with it yet but the assembly and burn in went very well. Very happy with smoker! Temps did not swing and were rather steady. When using temp probes the temp guage (the gauge glows in the dark!!!) that came with the smoker was very close to probe reading when probe was placed at the same level.

I would say that this is an overall great smoker for a beginner/intermediate cook. I've had it for a couple of months now and almost every weekend. I like the versatility of being able to use it as either a reverse flow or typical offset smoker. It holds temps pretty well and seems fairly well made.I modified it some out of the box. I used silicon caulking around the seams while I was putting it together and added a gasket around both hatches. The only place smoke escapes now is the outflow and occasionally the grease port on the bottom.Like other reviewers, the top of the firebox on mine has started rusting, but it's not terrible and can be easily remedied. I have never seen a smoker where this didn't happen but I've never seen any of the really expensive ... MoreI would say that this is an overall great smoker for a beginner/intermediate cook. I got this smoker for my birthday about 4 years ago. I typically smoke food with it about once or twice a month and more frequently during football season. This smoker has done it all! I havent used it for grilling per se, just smoking.I’ve smoked multiple pork butts, briskets, chicken legs/thighs, beer butt chicken, jalepeno poppers and all turn out great! With that said, this grill isn’t perfect. There are some smoke leaks. The fire box could be a little bigger. The fire box has rusted some. But for the leaks, i used a heat regulated felt gasket to go around the smoking chamber lid. That took care of most the leaks. I used a mesh grate box in the fire box, and use primarily charcoal and add a few chunks of wood every so often to achieve good smoke. No. But is it better than any other $200-$300 kingsford or other cheap smokers? Absolutely! You cannot buy a better offset smoker and achieve great results like i get for under $300 bux. I love mine, it gets great results, and i didnt have to spend $800-$1000 to get it. When this one gives out in another 5-7 years, i may consider upgrading, but could very well purchase again.

This smoker is great, it is a heavy Guage steel compared to all the other offset smokers less than $300. It is made well and very heavy at 180 lbs, but is easily moved with the steel 12" wheels. It is easy to use and generate smoke, just know you will need 2-4 hours before you cook anything to season the smoker so don't plan to assemble this and then cook on it the same day unless you start early in the morning, took me almost 2 hours by myself to assemble it by my self, will be faster with a friend. So like I said there are tweaks needed to make this smoker run the way it should. First you will need seals on both doors (search for smoker seals) and a high heat food grade sealer to seal the firebox and the chimney they both leak heat and smoke like a sive. So like I said there are tweaks needed to make this smoker run the way it should. First you will need seals on both doors (search for smoker seals) and a high heat food grade sealer to seal the firebox and the chimney they both leak heat and smoke like a sive. I also used the seal material around the vent door on the firebox. The next tweaks I did are optional but I have found it does run much better with. The first is easy and cheap, used 4 - 1/2" × 2 1/2" carriage bolts, 4- flat washers big, and 4- 1/2 nuts to raise the the bottom fire grate 2" this allows better air flow around your fire and room for ash as well. Next I bought a charcoal basket and heat tuning plates from BBQ MODS on long Island NY don't worry they ship. The basket concentrates your fire giving better heat, temp control, and ease of use. The tuning plates deflect the heat and smoke down and under the food giving more even heat and smoke across the whole cooking area instead of your right side being 50 degrees hotter or more. And the last tweak was to install clamps on the 2 main doors so they will completely seal on the new seals installed. Almost forgot pickup an empty paint can from HD they are under $3 have a lid a handle and make the perfect grease can. Hope this helps.
Great smoker. Like others who have commented, you must maintain the smoker, I also use peanut oil, and touch up the outside once a season with black grill paint. From the start I was able to set the temp. and walk away for 1/2 hour periods without temp. variations, now I use a ThermoWorks Signals and Control fan which gives me one hour increments of unattended smoking. My grill fits well and highest maintenance is the smoke box due to the heat on the steel, again once a season to keep in top shape. It's an easy learning curve with this smoker, I literally was able to adjust the flue and fire doors within the first hour to know where the sweet spot is, no additional adjustment required. Now if I could only figure out how to get brisket to smoke in half the time. Cheers
Bought the smoker a month ago and have smoked three times in it. I knew before purchasing I dided need to install the gasket and latches (sold separately). My only issue is that the paint on the offset blistered and peeled the first time using. The instructions say to use high temp pain to touch up, which makes me believe they know it's an issue and aren't taking steps to fix. Other than that, the smoker works great and I like I can use whole logs to smoke.
About to start my 3rd season with this barrel of fun. It took a couple months to figure it out, coming from a cheap crap offset barrel charboil or w/e. Its pretty windproof, this thing (without a cover) survived the 120+mph Derecho that destroyed my part of Iowa, even this winter a gusty night blew my neighbors kamado joe off the patio and broke all the interior ceramics..One of two issues I meant to address right away was adding the latches and gaskets to make it air tight, but two years later I still havent... if you know what your doing it does a great job holding heat out of box. I use exclusively hardwood lump coal to grill and self sourced split logs for smokingSecond issue that hasnt been resolved yet is its not the friendliest thing to run out and grill ... MoreAbout to start my 3rd season with this barrel of fun. Its 100 for low and slow, maybe a 30 for charring up something quick, I imagine if I ever took the time I could add something to raise the coals, or my plan B is I thing ill just finally buy the OKJoe kettle grill
I've been cooking for years, but this is my first smoker. I did lots of shopping around, watched lots of YouTube videos and strongly debated wheather to go old school or go with an automatic type smoker. Obviously I went old school and I'm glad I did!I jumped in with both feet by smoking a brisket on my first go around. The brisket didn't turn out as well as I would have liked, but I learned a lot about the Oklahoma Joes. My next adventure was Back Ribs. Wow! They were a little overcooked but the flavor was fantastic. At this very moment I am smoking more ribs, using the 3-2-1 method and keeping the temperature between 200 and 225 degrees F. I used a rub with 1 part kosher salt, 3 parts coarse ground black pepper, a dash of garlic powder and a dash of onion ... MoreI've been cooking for years, but this is my first smoker. I used a rub with 1 part kosher salt, 3 parts coarse ground black pepper, a dash of garlic powder and a dash of onion powder. Three hours of smoking, two hours wrapped in foil with 3/4 cup apple juice and back on the smoker, then around one hour on the smoker unwrapped. If you are the kind of person who is as interested in the process as you are with the final product, this smoker is for you. There is definitely a learning curve, but luckily there is a wealth information about smoking online, which makes it well within anyone's reach. The Oklahoma Joe's isn't as heavy as a professional smoker, but it is well built and it's perfect for the home cook who wants to produce authentic smoked foods. I purchased the reverse flow smoker only because there is the option of doing just offset smoking or reverse flow smoking. So far I've only used the reverse flow option and I'm very pleased with the results.
Got this as a gift to replace my well worn Chargriller offset smoker. I wanted to try a reverse flow smoker and was due for an upgrade. It was ordered direct from OKJ and had to be delivered freight as there were non to be found in stock anywhere around. Made the trip well on a pallet but after assembly I see that all 3 of the fire grates were missing so I'm unable to offer a review of the function. Otherwise looks like a nice quality smoker. I agree an a few of the negatives listed by other reviewers, such as the need to order modifications such as door seals, better baffles, etc. If the manufacturer offers these "fixes" themselves, why don't they simple upgrade the design to include these? Also disappointed to see that the inside of the cooking chamber lid ... MoreGot this as a gift to replace my well worn Chargriller offset smoker. Also disappointed to see that the inside of the cooking chamber lid finished with paint that will eventually flake off instead of bare, oiled metal like the rest of the interior. As for complaints of exterior paint burning off, that is to be expected and happens with all brands. Can't wait to try this out but unfortunately not able to do so yet.
I bought my first smoker after much research. I went with the highland reverse offset smoker. Assembly was easy. First fire and seasoning went fine. First time I used the smoker was for two pork butts. Almost all the paint on the offset above the firebox has bubbled up and came off. And that’s with only one burn if you don’t count the seasoning burn. Kind of disappointed.
