I have been using Bob's Red Mill Tapioca Flour and Rice Flour for 25 years. I was diagnosed with multiple food sensitivities in 1995 and since then have made my own bread every week with Bob's Red Mill Tapioca and Rice Flour. The bread has a nice crunchy crust and is light and slightly moist inside. It tastes so good that other family members always choose it over bread that is purchased.

Good quality product I use in my flour mix. My complaint is that Bob’s Red Mill cut the quantity from 20 oz. to 16 oz. They certainly didn’t cut the price 20% to make up for it. I use this product a lot as my daughter has many food intolerances. Now I have to buy 5 bags to get the quantity of 4 bags.

I have been using Bob's Red Mill Tapioca Flour and Rice Flour for 25 years. OMG! This BEST Tapioca Flour. I need tapioca flour that is in a specific percent moisture range for making vegan/plant based cheese. If the moisture content is too high the cheese will not emulsify. I have tried so many other brands, ONLY Bob's is consistent batch-to-batch. Ever since I started using Bob's TF my cheeses always emulsify, perfect cheese every time. I use the flour for sauces (Chinese) and the texture is smooth and creamy. I highly recommend this product. DOWNSIDE: The reusable closure is USELESS with the TF. So I store mine in the original bag inside a reusable wide mouth glass jar to keep the moisture content consistent. The product will absorb moisture in the original bag once opened.

I don't know if these were not harvested correctly, bc tapioca is harvested from the cassava root and if not done correctly it can contain toxins, but I get SICK AS A DOG for days when I eat this. I didn't make the connection at first, but finally I realized every time I ate my paleo bread made with this I was incredibly sick to my stomach for days. I was eating the bread to soothe my stomach and getting sick all over again. I finally stopped eating the bread for several days, thought I just got better then ate the bread again and was again very, very sick. I used to make the bread with arrowroot flour, and was 100% fine. But switched to tapioca bc the recipes are always interchangeable. Now I am stuck with 7 bags of this I can't use or return. Probably not so secret, but I love it regardless! My boyfriend has a gluten allergy and ever since we started dating, I've been looking for ways to cook gluten-free versions of his favorite foods. The big ones are pizza and meat buns. I recently added tapioca flour to my gluten-free flour mixture (potato starch, rice flour, and seasonings) and he was so pleased with the results! It's the closest I've ever gotten to tasting like the real thing. I'm not really exactly sure how or why the tapioca flour does what it does to the dough, but it definitely went in the right direction. Compared to previous batches, it was flakier on the outside and softer/doughier on the inside, and didn't interfere as much with the flavors in the pizza or the meat buns. I love the tapioca flour! I use it to make cheesy rolls and can easily go through one or two bags of flour a month. I used to be able to find the tapioca flour in my local grocery store but due to popular demand, it has become harder to find (that's how great this product is). I was so excited to find that I could order the flour straight from Bob's Red Mill, and from now on will order from them instead of hoping to grab a bag or two before they fly off the shelves. The velcro type re-sealable bag design makes it so easy to keep the flour from spilling everywhere, but also really easy to open. Tapioca flour is easy to use, however when pouring it out or measuring, be careful because it flies everywhere.

Understand that tapioca flour is a structural element in gluten free baking. Some critics bemoan its high carb content--but they are missing the point. Especially if you are trying to create a gluten free bread recipe that offers the texture of a wheat bread, tapioca and xanthan are essential to giving it the body and strength to hold a decent loaf form. I put nearly a cup of tapioca flour per loaf--and I regularly produce bread that folks cannot tell is a gluten free product.Obviously tapioca can also be used as a quality thickening agent--but I focus on gluten free baking, since the need for information there is more critical.

I use this flour to make beiju, a Brazilian crepe. Because I don’t eat grains. Beiju is my favorite form of “bread.” I decided to buy a large sack of this flour instead of many little sacks because it is more economical. I love Bob's Red Mill Tapioca Flour! I've used it for years and I couldn't do without. It's very finely ground and flavorless, making it an excellent choice for thickening fruit pie fillings, jams, puddings and stir fry dishes. Even the most delicate of flavors are never overpowered by it. I have many food allergies and chemical sensitivities and I've never had a problem Bob's Red Mill products.
