Quite frankly, piling up charcoal on one side of a Weber has been an effective way for me to create two-zone cooking on my Weber. So, I wasn't expecting the Slow 'N Sear to add much to what I was already doing. I was pleasantly surprised. By a summary analysis, I can understand the SnS works great at keeping low temperatures not only thanks to its design that blocks direct infrared heat from reaching the indirect zone but also by raising the coals up to the food grate, causing the heat source to originate from a much higher point compared to cooking with the charcoal baskets or "bare" on the charcoal grate; this can easily be proven by measuring the temperature at the food grate level (ie: 250f) and through the upper exhaust vent (360f): the difference of ~100f is staggering, and it's inherently caused by the coals lying much higher, meaning that in order to reach roasting temps the fuel needs to be burning much hotter than it would normally.For a quick and dirty comparison, cooking a small-sized spatchcocked chicken (barely 2lbs) works great with 15 lit briquettes burning on the charcoal grate, easily reaching and maintaining 350f for the time required; whereas to achieve the same using the SnS indirect setup requires 40, as the food grate will reach 350f once the exhaust is closing in at 450f, and the searing zone 530f (according to the lid thermometer, which is directly on top of it).Don't get me wrong: the SnS is an excellent product and I appreciate the passion and engineering behind it, and I'd like to invite anyone that can afford it to get one, as its convenience is unparalleled; but it's not ideal for cooking everything and anything: sometimes, charcoal on the charcoal grate can still be the best choice.Cheers

I wrote a scathing review about this product (probably to harsh before using it), it actually got one of the owners (I think) to reach out to me by phone. First and foremost, Sharon was a pleasure to talk with. Very professional, knowledgeable, friendly, and, extremely helpful with my purchase of the Slow "N Sear Deluxe. I have used this product twice so far. The first instance was cooking twenty bone in-skin on chicken thighs for a family cookout. The chicken was wonderful and I must say was much better when using this product vs. simple indirect cooking. I truly think the water reservoir made a huge difference. I have been waiting a long time to get my hands on Slow N Sear Deluxe. The shipping cost to Canada is high, but when it came in the discounted offer I finally pulled the trigger. It was delivered super quickly. I have been using it since then. I like the amount of charcoal it can hold. Like the hot, it can get on the direct side to grill some beautiful steaks. Low and Slow cooking is also awesome. Love the fact that I don't have to open the lid every few hours to refill the charcoal. It holds the temperature of my kettle for hours just fine. Also, I like the removable water reservoir. I would love to order more products from SNS Grill, as after using this I am a big fan, the only thing that holds me back is the shipping cost to Canada. I have used Weber grills extensively since they originated, and even ate at their restaurant in Chicago. Highly recommended. Check their impressive gravity cone feed kettles. (Hear that, Dave?) I've been using SnS and drip pans for probably 6 years. The devices and methods that Dave has invented are the most significant advancement in charcoal cooking since the Weber kettle. As he'll tell you "I didn't invent the kettle, I perfected it." Which is very precise. After countless awesome cooks, my family and friends will attest! I purchased the SnS Delux to prepare a 7 lb. sirloin tip roast for a Super Bowl party. I had read about the insert and decided to add it to my Weber 22" grill...I couldn't be more impressed with it's function or fit. I found it easy to hold temps between 325° and 350° for the roast and the results were spot on. Sliced the roast thinly on a slicer for roast beef sandwiches and my guests were blown away! I've been using a Weber charcoal grill my entire life and this addition is grilling perfection. I also purchased the cast iron drip pan but sadly it didn't arrive in time for this roast. When it arrived I found it to be solid and well made...looking forward to trying it soon.

I'm a strength athlete in my free time, and while I can certainly squat in chucks, I much prefer doing so wearing powerlifting shoes because they offer me better leverage and put my spine in a more neutral position. Cooking L&S without using an SnS surely is possible and has been done for ages, it's just not as convenient. The fuel reservoir of the SnS is ample and allows for 8+ hours of unattended cooks at a stable average of 225 on a full load of good quality briquettes; the water reservoir helps to modulate the temperature as well as offering additional shielding from direct heat. The coals are also raised to the food grate, causing the heat to originate from a much higher point than usual. In turn, this allows the temperatures at the food level to be lower and closer to the needed 225, as the "hot spot" will move to the dome instead. Banking coals or using the charcoal baskets also doesn't offer protection from the radiant infrared heat reaching the food, causing burnt spots and lack of uniformity in heat overall.This directly correlates to the second point above, which sees the SnS not as efficient as the charcoal baskets, as shown by one person in particular on YouTube. Technically speaking, it will always require less fuel and a smaller fire to reach a given temperature if infrared heat is allowed to reach the probe (or the food). Indeed, 20 lit briquettes in the charcoal baskets will radiate considerably hotter compared to the same enclosed in the SnS charcoal holder. However, only the latter will deliver uniform heat all around the food, instead of the "direct but slightly to the side" infrared heat of the former. I could concede to people using makeshift SnS with modified charcoal baskets and firebricks that they may achieve a comparable result but again: chucks and powerlifting shoes. If it's your hobby, it's worth investing in it.While on the subject of money, the third and last point from the list to the SnS: its price. I'm not located in the US nor any other country with an authorized reseller, meaning that to purchase a genuine SnS I had to place an order from a reseller in the UK and have it shipped to Italy. Needless to say, it was Expensive. In Europe, the cheapest SnS comes at £99 plus shipping (roughly $155), and I'm quite jealous of y'all getting SnS Deluxe for $99 delivered.Given all I said above, I don't regret having paid the premium especially considering I'm supporting David and his American company, whom has shown engagement with the community, listening to feedback, and put passion in his product. Do I wish I could get my hands on an EasySpin grate for less than $130? Yes. Do I wish I could purchase a SnS kettle at all because it offers everything I'd like my kettle to be? Absolutely. Do I hold a grudge against SnS for their retailers' prices, or for offering their product to the price point they consider honest? No. If you don't want one or consider it too expensive, then don't buy it and use any other method available to you.Lastly, I would like to point out how a certain individual's weirdly aggressive "debunking videos" on YouTube was actually what pushed me to get one—trying so hard to find ways to disprove the convenience that comes with the SnS while ignoring the existence of the water reservoir, along with every point I made above andh many others I surely forgot made me look into the product with a more technical eye and attentively weigh its pros and cons. The pros won me over.It is incorrect to think the SnS is the perfect accessory that will make your barbecue great or to expect it to fix underlying shortcomings with your technique; what it does, and does so very well, is to provide a sound and convenient starting point to achieve consistent results.

I read and re-read the lighting instructions - if I'm going to do this, I'm going to do it right. In less than an hour I had it up to 225 degrees. A few minor tweaks of the top vent kept it where I wanted it all morning and into the afternoon. I took a short nap. Then about 4-1/2 hours in, the temperature started dropping slowly. I took off the grill lid before it fell to 225 degrees - the charcoal was a little more than half gone, and not burning very well on the end opposite where I started it. I gave the coals a quick stir and replaced the lid. The temperature had dropped to 180 degrees, so I opened the top vent all the way - in less than four minutes, it was back up to 225. In 10 minutes it approached 250 degrees! I panicked! Get the water bottle! But no, closing the top vent brought it right back down. In all it was above 250 degrees for nine minutes, peaking at 254 degrees. It hurts, but I can stand it.We're now six hours in, and all is well, cruising at 230. I'm guessing there are enough coals left for at least another hour or two - plenty of time for a rack of ribs. I would not have believed it if I hadn't done it myself.I don't know yet how to break it to my old New Braunfels Smoker - but I will figure it out. I bought it a new cover to ease the way. This is not goodbye, just so long, pal.

If you only use your Weber Kettle to cook meat that is done in under 45 minutes (Burgers, Hotdogs, Sausage, Fajitas, Steak, Chicken Wings etc.) then you probably don't need this.BUT if you do long cooks/smoke (Brisket, Tritip, Pork Butt, Ribs, Whole Chicken, Turkey etc.) you need this.The water reservoir is fantastic. It holds right amount of water. Great placement for easy access in case you need to add more water for a 12+ hour cook/smoke. I believe it provides a little protection/barrier in case you have a large Brisket that is encroaching into/over the charcoal basket.
