After watching a few YouTube videos on this product, I was admittedly, on the fence. Further investigation revealed more positive than negative opinions, I also understand that not everyone's mileage will be the same for any product. So, I went for it.First thing I noticed once I had the Slow N Sear out of it's packaging was it's build quality. The thing looks great and has a nice heft to it. I simply followed the directions, fired it up and didn't touch it for almost 6 hours. I watched my Inkbird IBT-6XS and it hardly bobbled. After this time I noticed the temp started to climb so I went to investigate. The water reservoir was low, but the coals were chugging right along, a little less than half weren't even ignited. I topped off the water reservoir, tossed a couple handfuls of fresh coals in for good measure and let it ride. After that particular pulled pork cook, I had enough fuel left to cook a few pieces of chicken. Very impressed and glad I bought this thing.Thanks for a great product.

Game changer!!! I had struggled to maintain temperature in a kettle grill even while doing short smokes of things like a whole chicken. I had read that the water reservoir makes a huge difference in achieving uniform temperatures throughout so I gave it a try. My very first smoke was last night. The grill maintained a consistent 223-238 over a two hour period and I only made one slight adjustment to the exhaust vent when temps hit 237.Coming from the world of pellet smokers where you just set a temp and walk away, charcoal was quickly becoming my nemesis. Last night's BBQ was nearly as easy as the pellet smoker due to the SNS.

I have been using a competitive product, the Smokenator, which also does a great job at regulating temperature for smoking meats. I recently moved and left my grill and accessories behind. I bought a new Weber kettle and decided to check out the Slow 'n Sear. First use: Standing rib roast. I dialed the temp in at 225 and let it do its magic. Perfect roast. Next item: Thick Berkshire pork rib chops. A brought them to 120 on the cool side, then put on a good sear on the very hot side to finish. This is where the SnS demonstrated its superiority. The sear side developed a quick and tasty crust on the chops and the inside was succulent. Rave reviews from the table about the chops, all courtesy of the SnS. An A+ BBQ accessory!

I was actually researching modifications for that hunk of junk when I came across an article about the Slow N Sear. For less than I spent on that cheap offset smoker, Iâve now transformed my trusty Weber into a lean, mean smoking machine. My very first test cook was a rack of baby back ribs. 9.0 out of 10. And so, the next day, I jumped right into a 6.5 lb. brisket point end. The cook was LONG â and I ended up wrapping the brisket and finishing it in the oven to get past the stall â but the Slow N Sear worked like a charm. I watched one of their videos to get everything set up. I'm not a highly skilled griller but the Slow âN Sear makes my ribs, hamburgers and steaks better than they used to be. No more burned, overdone meats.Also, I took some trimmings from one of my apple trees and tossed them onto the charcoal and they add a nice flavor to my meats.I hoped that this would be an improvement in my grilling and it is. Since my meats are offset from the charcoal, my Weber grill acts like a mini smoker and my family loves the results.I bought a hinged stainless steel grill to replace the original Weber chrome plated grill and I recommend that too. I was blown away by the intensity of the heat when I went to sear at the end. You can overshoot your endpoint temperature in a few seconds with this thing. Neat up was beef short ribs. I was amazed by the steady temperature. After setting up and zeroing in on 220, it held within 1 degree without any intervention at all from me for 6 1/2 hours. The full cook took 10 hours and required no additional charcoal beyond the initial load. As others mentioned, this is far superior to the little baskets Weber makes for two zone cooking. So after seeing this all over on youtube and instagram i pulled the trigger last winter. I have LOVED it. So much so, this has become to "go-to" gift for any of my buddies that have a kettle style grill. It is my #1 recommended attachment recommendation. I can't say enough good things about it.If you follow the instructions and pay attention, this thing works EXACTLY how it is advertised. It has made long cooks a breeze, it has taken the worry out of over night cooking for me.The other night I put 2 9lb pork shoulders on my kettle, fired up the slow n sear at 10pm, woke up at 6:00am to take a peak, meat was at 170 degrees and grill temp was at 235! I added some more charcoal, wrapped the pork and let it climb to the temp I wanted. Minimal work, EXCELLENT results.

So for the positive thoughts I can say itâs nice to have all your coal in one spot and simply refill when needed and to have your water tray already there. Overall you can really accomplish what you need with the snake method or even some bricks to make a hot zone. When I ordered the real deal from SNS, I was pleased to see that it is substantially taller, and at least from my perspective, this is important because it both holds more charcoal for longer cooks, and puts the heat closer to the grate for easier searing. However, did taek off one star, because I suspect the claims of 8+ hours of cooking are exaggerated. I hope I can figure out a way to get that type of performance, but so far on several cooks, I see the temp start dropping right around the 6 hour mark, and to keep it going I have to give it a good stir to clear out the ash, and typically add some more fuel. To be fair, there is 1/3 or more of the originally charcoal left at this point, I can't seem those nubs and small pieces to hold the temps like it can with even a few more fresh briquettes. All things considered, even if I never get more than 6 hours of uninterrupted low and slow cooking, I'm happy, and would have still bought it. If I get more time, that'll be a bonus. I do recommend purchasing the original design, as I feel the new design would only exacerbate the ash build-up issues... not to mention, the original design is much more competitively priced.
