I am so impressed by this bread machine. It does the best with mixing the dough, so elasticity I just could not believe :) I have made the half & half bread dough twice now. Been making it for yrs. I use grams, because I use stone wheat and it weighs differently than other wheat flours. This is the first time I have weighed in grams, have always weighed in ounces before. I am just using the dough setting cause I make two loaves, bake in oven. We just prefer it this way. I also use canola oil instead of butter but the bread comes out perfect. So very impressed by this bread maker, wished I didn't wait so long :0)

Bread machine came and had a defective pan. When I called about it, they told me they don't make defective pans. I would have to send a video by email to Zojirushi and blamed it on me for using seeds or nuts (which I did not do). This is my fourth machine and all the pans have been wonderful thus the disappointment in them not being willing to look at it or replace it. Very disappointed in them. Don't recommend them if they don't stand behind their products.

Makes great white flour based breads, fresh, timer works perfectly for our family. Con's - Wheat based flours are not my favorites, the crust is tough and chewy instead of crunchy or soft like white breads. Says you can make cakes, but it doesn't come out the same as the oven. Chewy outer layer where it bakes in the pan. It is rather large so just prepare a space to store/bake. I have used this for making dough from internet recipes and those turned out well. So if you want to make rolls or pita, you just need to make 2lbs worth so that the kneading is done correctly. Overall, we're a family of four and eat bread everyday. I've stopped buying store bought bread. The cost averages about $1.50/loaf which is amazing (using all organic ingredients). I feel good feeding this to my baby knowing it's fresh and simple ingredients. Because it's fresh, your toast doesn't need tons of butter and sandwiches don't need a lot sauces. I started making loaves as presents or when having dinner at a friend's - it's always a hit. I've turned a few friends on to buying a machine as well.

Bought this unit in January of 2021. Had a couple of other makes prior to my 45 years of making bread. They are all different. I've read other reviewers that had a lot of issues with this machine. First off i only make bread, buns and or bagels in it. I know you can do more, and if you clean the pan properly you shouldn't have issues. NEVER use scouring pads of any nature on the pan unless you want to buy a new pan soon. The non-stick coating isn't heavy on the pan. It comes off, even when only making bread. I'll need a new one soon. Generally i make two loaves a week. That's well over 300 Loaves so far. Honestly, i have no idea why you want to make jam or meatloaf in this machine. Sounds messy. Honestly, i have no idea why you want to make jam or meatloaf in this machine. Sounds messy. We have a Kitchen Aid for such things. Its a pain to clean on the inside. I use a little vac for that. So there you have it. As far as bread recipes are concerned, trail and error sometimes. I use the standard settings but not the amount of ingredients they suggest. The bread doesn't seem to turn out for me.The type of water you have plays a role, the temperature of the water also. Read up on what each ingredient does when you add it to the flour. Sugar doesn't do what most people think it does. It helps when you know these things as you make bread........Happy bread baking
This was my Christmas/Mother's Day/Birthday gift (due to the cost). And I love it. But I wish there was a better recipe book included. I find the Zojirushi one pretty limited, especially since there are so many things that can be done with this terrific machine. When I went to make a cake, it essentially says to use a pound cake mix and run the cake cycle. Seriously? The King Arthur book (pretty thin and mailed by itself in large box) has some interesting ideas. I'd have hoped that since King Arthur is a baking site, there's be more ideas for cakes, pastry, etc. But overall, a good purchase. I recommended it today to a friend who's considering a bread maker.
I bought this machine from KAF about four years ago. From the beginning it had some problems that I thought were minor, or due to my inexperience with using the machine. By this time I've used it enough that I'm sure it's not me.1. The paddles aren't equal in - something. Strength? Each loaf is mixed disproportionately, and if not corrected, turns out larger on the left side than on the right. I have to catch the machine at the right points and do two things. First, before the first rise, while it's still mixing, I break up the dough and put it back in the machine so that the ingredients get uniformly mixed. This is especially important when incorporating raisins, nuts, and similar ingredients.Second, before the second rise and bake, I have to again catch the ... MoreI bought this machine from KAF about four years ago. First, before the first rise, while it's still mixing, I break up the dough and put it back in the machine so that the ingredients get uniformly mixed. This is especially important when incorporating raisins, nuts, and similar ingredients.Second, before the second rise and bake, I have to again catch the right point and reshape the loaf, as the machine shapes it with a large left side and small right side. The second problem is that the display is not synchronized with the printed indicators on the cover panel. For example, the pointer for the crust control are actually lower than the words they are intended to point at. The lower indicators are virtually obscured by the panel, making it very difficult to be confident that I'm actually selecting the intended course: jam, cake, sourdough, or home made.I didn't go back to King Arthur Flour about this before now because I was overcome with a serious health issue. Now I am well again and baking bread. I hope that if Zo was aware of these issues with this model, that they have corrected them by now and can advise me on a course of action. The bread machine bakes a nice loaf when I perform the interventions described above, and I would buy it again if I were sure the mechanics of the paddles, and the display worked correctly. This is a complex machine and I can understand the difficulty of manufacturing.
Consistently the end farthest from the controls comes out a lot darker; every single time. The instructional DVD is useless to me b/c I have nothing to play it on. (To Zojirushi: What's wrong with shipping a bread machine with WRITTEN instructions - how to program it yourself, etc.?) I stick to the quick bread cycle. One attempt to use standard cycle was a disaster. Dough was not mixed, a jumble of dry powder and dry chunks that looked almost like dough. I find it very hard to get paddles out, even after soaking the pan full of water for some time. A sturdy (wet) paper towel does help to grasp the paddles without scratching them. I bought this machine to have horizontal loaves and be able to bake a larger loaf. I bought this machine to have horizontal loaves and be able to bake a larger loaf. Sometimes I want to go back to my vertical early 1990's-vintage Hitachi. It still works. For me buying the Zo was a big tradeoff. I use the Zo to bake 1 to 2 loaves a week and pizza dough several times a month. Would I buy another Zo of this model? Probably not
Bought this a year ago and it works great. I tend to make 1 lb loaves, and while everyone says that isn't recommended, my loaves come out excellent. I use recipes from a bread machine cookbook and halve the 2 lb measurements. I'm at 5000 ft elevation - When using store-brand yeast, I reduce per the local extension service recommendations....when using SAF yeast I do not. I also always add 1 Tbsp of flour extra (for a 1 lb loaf).I find the included manual a bit confusing. It's also strange that the machine has the same completion time no matter if you want light/med/dark crust.....I guess when you choose dark it uses a higher temp.
I bought a Zojirush bread machine about 4 years ago. We were remodeling so we left it in the box for about a year. After unboxing and putting it in the pantry we kept saying we have to start using it. When we finally did a few months ago, the heating coil would not work. Called Zojirush and they confirmed it was the heating coil. Told me we could send it to California to be fixed but would probably cost more with postage and charges than it was worth. I paid over $300 for this machine from King Arthur and this was their response. So I threw out a brand new bread machine. I was hoping someone locally could fix it but Zojirush will not sell the heating coil to anyone. It was a beautiful machine and I would have loved it if would have been operational.
The ZOJIRUSHI Home Bakery Supreme Breadmaker is an easy to use and very versatile machine. In addition to loaves of bread, the machine can be used to make many other food items such as Jams, pizza dough, cakes and even meat loaf. As a bread maker the Zojirushi makes wonderful consistent loaves of bread in the more traditional horizontally rectangular loaf shape. The Bakery Supreme comes with lots of recipes in the manual as well as troubleshooting and adjustments you can make while cooking and suggestions for modifying recipes to make Your perfect loaf. The display is easy to read and audible tones are generated as reminders when your interaction is required or when the loaf is done. There is also a large viewing window to watch or check the progress of your loaf. ... MoreThe ZOJIRUSHI Home Bakery Supreme Breadmaker is an easy to use and very versatile machine. The display is easy to read and audible tones are generated as reminders when your interaction is required or when the loaf is done. There is also a large viewing window to watch or check the progress of your loaf. This machine has a "quick baking feature" which produces a loaf in less than three hours, with very little loss of texture or grain quality compared to the full term cycle. In addition there is a keep warm function which will keep the bread warm for several hours after cooking without drying or over crusting the loaf if you are not "Johnny on the spot" when the loaf is done. There is also a "Crust control" which controls the crust browning which is really nice for the finer French breads or some of the more robust Mediterranean styles. As I said, the manual has many recipes, but there is still a learning curve, especially for your favorite family recipes, which most likely do not compensate for non-stick beater vs hand kneading etc. (ie. may require more flour or oil). The Zojirushi has dual beaters in the base and the preprogrammed kneading and rise cycles worked amazingly well, even with smaller batches. When baking is complete, the loaves are easily extracted and cleaning the machine is extremely simple. One note: This machine has the ability to make a large 2lb loaf of bread. However, you should remember that if you make too large of a loaf, then the slices may not be the ideal size for sandwich (bags) or clubs. In addition, you may have to experiment to get the proper size loaf to enable the slices to fit your toaster. (or just trim the loaf). Personally, I like a nice, large, hot, fresh slice right out of the bread machine.
